A great Curry blend has; Mace, ferungreek, cumin, cardamon, garam masala (Indian spice mix you can buy in the store) , pepper, anis seed, red pepper flake and any other spice you like really, seeds mostly,( like cardamon and cumin) pungent spices, ground down via a morter and pestle. There are different curries for specific kinds of dishes but this is mine and I like it. You take these spices and heat up a skillet put some butter or clarified butter called 'ghee' into the pan and add the spices to 'toast' them. When they get nice color and cook together a little, add your favorite meat (sliced thin) to that mixture adding maybe a little more oil or ghee or butter to keep things moving because the spices with get thick and like paste in the oil. Cook the meat, add your favorite vegetables and maybe a little stock, yogurt or coconut milk (which comes in a can) if you want more of a sauce, and then serve it over rice, jasmine rice is my favorite.

Curry is from India, but you can make anything into a curry from taking your favorites spices and preparing them as I have explained above. There are mexican variations that are delicious and just as easy...
