You can get luane or chip board at the home improvement centers in many sizes. Ask the lumber department at the Home Depot or Lowes and explain what you want it for. It comes in rather large sheets and they have a saw machine that can cut the sheets down into manageable sizes. You are very smart to test the color in the rooms before application. This way you can see what the color transforms to with differing lighting and time of day conditions. You can also purchase very large posterboard at craft stores, but this has a tendency to bow so you would actually have to mount it to the walls.

Why not just buy a few sheets of drywall, paint that and lean it against your wall? Drywall sheets are generally 4' x 8', light enough to carry/handle but heavy enough not to bend. AND, they're usually pretty cheap (around $7-9 for one board).

Just buy a roll of butcher paper paint it and hang it like wall paper with staples or push pins.
