I'd go places with wildlife, petting zoo's and stuff, honestly, your kids aren't going to remember much of your vacations at that age, wait a few more years, take them someplace where they can explore. Try Nova Scotia and Prince Edward Island. Lots of beaches, rock and sand, Briar Island, NS is a excellent little very untouristy island that is mostly nature sanctuary and you can see seals, go on whale watches, and bike around the island. The Cabot Trail on Cape Bretton Island is gorgeous, its a driving tour, but awesome. Prince Edward Island is great place to learn about the history, Anne of Green Gables, play on the red sand beachs. The water is really cold in the ocean there though.
