In the U.K, the fish used is usually cod. It's battered and fried. And, you'll need to make some french fries. Don't forget the malt vinegar. You sprinkle it over the fish and chips. And make sure it's served hot.

Crispy Fish and Chips Recipe
Use Cod a nice hearty white fish! Make sure the potatoes are towel dried before frying. You can save time and fry in 2 pans.I like the malt vinegar, but you can serve with tartar sauce. If you have left over batter dip a sliced sweet onion and fry (Onion Rings)
1/2 cup flour
1/2 cup cornmeal
4-6 ounces beer
1/8 teaspoon salt
1/2 teaspoon Old Bay Seasoning
4 cups vegetable oil (for frying)
4 large russet potatoes, cut potatoes in even,finger-sized pieces
2 lbs fish fillets, cut in half,crosswise
Preheat oven to 250° F.
Prepare batter: Mix flour, cornmeal, old bay, and salt together.
Add ale and mix well.
Batter should be thin.
Heat oil in deep fryer.
DO NOT FILL TO TOP.
The potatoes and the fish will cause the oil to bubble.
Allow room for the oil to rise.
Cook 1/4 of the potatoes until golden brown, about five minutes.
Drain on paper towels.
Place in warmed oven.
Repeat process until potatoes are done.
Season with salt and pepper.
Dip fish in batter, allowing excess to drip off.
Fry in batches until golden brown, about 5 to 8 minutes.
Drain on paper towels.
Keep warm in oven until all fish are cooked.
Season with salt and pepper.
Serve with a sprinkling of malt vinegar.

I'd suggest finding a good "British" cook-book. When I think of fish and chips, I think of London/ England. Generally, the fish is lightly fried, and the chips are what Americans call fries and are fairly good size. (As opposed to what Americans call chips and Britons call crisps).

1/4 cup KRAFT LIGHT DONE RIGHT! Zesty Italian Reduced Fat Dressing
1 pkt. SHAKE 'N BAKE Original Chicken Seasoned Coating Mix, divided
1 lb. white fish fillets, such as haddock, halibut or cod
1/4 cup MIRACLE WHIP Light Dressing
PREHEAT oven to 400°F. Cut each potato lengthwise into eight wedges; place in large bowl. Add Italian dressing; toss to coat. Arrange, cut-sides down, on large baking sheet sprayed with cooking spray. Bake 20 min.
MEANWHILE, remove 1/4 cup of the coating mix for later use; set aside. Spread remaining coating mix onto large plate. Spread tops of fish fillets evenly with half of the MIRACLE WHIP; press, dressing-sides down, into coating mix on plate. Repeat with remaining MIRACLE WHIP and coating mix on plate to coat remaining sides of fish fillets.
REMOVE potatoes from oven; turn over and arrange around outer edges of baking sheet. Place fish on rack in center of baking sheet. Sprinkle reserved 1/4 cup coating mix evenly over potatoes. Bake 15 min. or until fish flakes easily with fork and potatoes are tender.
