It gives the guests confidence that the hotel keeps things clean. It is easy to see stains and dirt on dark-colored towels, and so white towels indicate that the hotel has "nothing to hide," that it is sanitary, etc. Also, white is brighter, and people like to walk into a bright bathroom--again, it looks cleaner. One thing that people worry about when staying in hotels is that they are using items that other people have washed with, slept on, and so forth. They fear contamination. If things look crisp and bright, then their fears of catching something are diminished.

Few pointers to know why white towels are best when it comes to hotel towels:

White colour gives a calm and soothing effect.
Any stain in the towel can be seen immediately and proper care will be taken to wash it off.
If the stain doesn't go then the towel can be dyed in different colour.
The bathroom gets a classy and calm look because of the white towels.
Guests are also highly impressed to see clean white towels in the room.

They aren't. Some are beige and I've seen trendy up-scale hotels use red and black.

Otherwise, I would imagine so they could bleach them clean without destroying the towels.

white towels are easier to clean, they don´t fade, and they make a statement about how clean the hotel is when they look good.

Easier to keep clean because they can bleach them, also it's more sanitary, think of all the other people who have used that towel, now aren't you glad that they can use bleach when washing them?

They are white to give the "illusion" that you are staying in a "clean" place. Just like that's the reason most table cloths in resaurants are white. Good question!

So they can bleach them & keep them clean looking. Also they are cheaper than 'colored' towels to buy in bulk (due to not having to color the fabric)

they are cheaper to buy in bulk because they don't have color so it is cheaper to buy them then colored towels.
plus they are easier to clean because you can just bleach them, you do not have to worry about them fading and you can kill more germs and stuff on them with bleach so it is more sanitary to use them again.
