The enzyme could be the culprit. By the way, it's called bromelain. Papain is from papayas. On the other hand, many fruits contain so-called lectins which bind to proteins in the mouth and cause irritation.

I would have to agree with both the acidity reason for your problem and the possible allergy. Another thought though is specific chemicals used in treating or growing the pineapples. You say some pineapples so I'm guessing that not every one that you eat gives you irritation. If that's the case then maybe different brands or companies are using different chemicals to clean, grow, or keep bugs off.

Does this only happen to you with pineapple?
I went much of my life thinking certain foods, like melon and bananas, just made your mouth itch. Eventually I mentioned this to someone, who looked at me like I was crazy, and said, "What the hell are you talking about? Melon doesn't make your mouth itch." Turned out I have an allergy of some sort. I later found out about this thing called Oral Allergy Syndrome that sounds like it is probably my issue. In particular, "The foods known to cross react with ragweed pollen are watermelon, cantaloupe, honey dew, zucchini, banana and cucumber. Even dandelions or chamomile tea can cause a reaction because they belong to the same plant family."
I don't see any specific mention of pineapple, but it could be related. I don't have any strong reaction to banana, melon, etc., but it makes my mouth and throat itchy. Just enough to be annoying.

Sounds like an allergy. My hands itch like crazy when I cut up fresh pineapple.

It is definitely the enzymes in the pineapple. They do the same to my tongue, as well as eggplant. Don't ever marinate meat/fish with raw pineapple, it will literally destroy the texture of the meat. Freezing or gently cooking the pineapple will kill the enzymes.

Yeah, I hate that. I think its cause of the flesh of the pineapple, its just naturally prickly and stringy. And very tart too.

I don't know why it happens but I have had it happen when eating fresh (not canned) pineapple. I'll be watching to see if somebody knows why.

it's something to do with the ripness of them I think...like if you eat a banana that is not very ripe ( really yellow) it will make your mouth dry.
then again some people just have allergies my father can't eat kiwi , peaches, pineapple or strawberries... the make his throat scrachy

Its the acid in them, but now you can buy low acid pineapples and they are fantastic. They are also super sweet. The regular ones hurt my tongue too.

pinapples are very acidic, this can "cook" the outer layer of your tounge it is harmless as long as you dont go nuts with it.
fresh pineapple contains an enzyme(papain) that works as a meat tenderizer, and your tounge is made of meat... cooked pinapple does not have this active enzyme.
