If carbs are all you're concerned about, eating the whole egg is best (lots of protein!)

the egg is completely protein--so theoretically, it wouldn't affect your low carb diet
the white is made of protein, and the yolk is also made of protein
the egg typically has 6 grams of total protein--3g in whites, 3g in yolk

however, the yolk has a lot of cholesterol--and should be eaten in moderation (1 yolk a day is fine)
you can eat as many egg whites as you want

but i wouldn't cut yolk completely from your diet--you do need the nutrients it provides on a daily basis

an interesting fact is--bodybuilders--since they need 200-300% of a normal person's protein needs everyday--they would switch to something like whey protein--where one serving provides 24g of protein (4 eggs worth, or 8 egg whites...think about all the eggs you would have to consumer)

you can eat the whole thing - eggs are high in protein. Yolks have lots of cholesterol though. When I make scrambled eggs - I use two whites and one yolk to cut back on the yellow.
