Angel Hair Pasta with Lemon & Garlic
1 tsp. olive oil
2 peeled, minced garlic cloves
1/2 cup dry white wine
1/4 cup freshly squeezed lemon juice
1 cup chopped tomato
8 oz. angel hair pasta
1 cup frozen spinach, thawed, patted dry, finely chopped
1/4 cup basil
2 tbsps. grated Parmesan
pepper to taste
Bring large pot of water to a boil over high heat and maintain a boil. Put olive oil and garlic in saute pan and cook over meduim heat just till garlic turns brown. Remove saute pan from heat and pour in wine. Return pan to heat; cook another one to two minutes, until wine is reduced by half. Stir in lemon juice, tomato, and spinach; remove from heat. Place pasta in the boiling water and cook 3 to 4 minutes. Drain pasta and put in warm serving bowl. Add basil, pepper, parmesan and tomato mixture; toss and
serve.

DELICIOUS Chocolate Dessert (dairy-free)
This is a wonderful THICK pudding-style dessert that I love to eat. It is SO nice to have something that I can enjoy that doesn't contain dairy products!! :-) Cook time is unknown. To be honest with you I didn't think to time it!! Its an estimate... so PLEASE KNOW THAT COOKING TIME IS NOT EXACT!!!
1 1/2 cups chocolate soy milk (I use 8th continent)
2 1/2 tablespoons cornstarch (if you want it REALLY REALLY Thick, add a bit more)
2 1/4 tablespoons brown sugar, packed
1 teaspoon vanilla extract
1/8 teaspoon salt
1/4 cup non-dairy chocolate chips
In a medium saucepan, combine soymilk, cornstarch, brown sugar, vanilla and salt with a whisk.
Heat over medium heat, stirring constantly, until mixture comes to a boil and thickens.
Remove from heat and stir in chocolate chips.
Keeping stirring until the chocolate chips have melted into the pudding.
Cool for 5 minutes and then put into whatever you wish to chill it in, and refrigerate for several hours.

Ing.
Whole Wheat macaroni Pasta
Better than Cream Cheese
Vegenaise/Soyanaise
Honey/Brown Sugar
Pineapple Chunks
Raisins
Walnuts (optional)
Cook the pasta till desired tenderness. Mix Better than Cream Cheese, Vegenaise,honey thoroughly then add the rest. Let it cool. Then serve!Yummy!

Just about anything that is "dairy" based, you can substituted with soy. I know, I know, but when it comes to a small amount in a recipe...it really doesn't taste that bad. Also, tomatoe based recipes, like spagetti with no parmesan work well also. You can also use "butter powder", like the sprinkles that taste like butter. Good luck, man.

Just cook what you want if it calls for milk buy Silk soymilk (No bad taste with this brand) and for cheeselook for lactose free cheeses or soy cheese.
