Shouldn't it read this way: What is a person who knows several languages called?

No. absolutely not.
What IS a person CALLED who knows several languages? is just as easily understood if not moreso than the former example you gave.
When you put "called" at the end of your sentence, it just hangs there at the end.--sounding almost child-like.
The placement of the word, the subject, "what is a person called"--it is more condensed, the object is at the end of the sentence which is much more appropriate.

The latter is correct. However, most people just don't care about proper grammar anymore and you'll hear the former quite often.

BTW, the answer to the question is: polyglot.

Both of them are acceptable.The former is American English.The latter is British English.Widely corrupted.I like your attention to detail.And isin't the answer Multilingual?

You can put a relative clause between subject and verb. But you have to set commas.
