Meatloaf. A great easy recipe is 1/2 cup of tomato sauce, 1 cup bread crumbs, 1 egg, some chopped onion(optional). There is a bbq sauce recipe that goes with it. The link is below. If it doesn't work here's the recipe. Enjoy!!!!
1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary
Preheat oven to 350 degrees F.
Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.
Cook's Note: Try serving as a sandwich with mayonnaise.

How about a pasta dish? You can either make the ground beef into meatballs, or just fry it up. Then boil up some pasta; fettucini or spaghetti or angel hair, or even just egg noodles. Put pasta in a big serving bowl, add the ground beef or meatballs, then your choice of other ingredients. Some suggestions are: canned or fresh tomatoes, artichoke hearts, fresh cooked veggies such as peas or asparagus or steamed broccoli, diced black olives, and/or fresh grated cheeses. Then top with lots of creamy, cheesy alfredo sauce. This is also really yummy if you add a ferw dollops of pesto and some fresh parmesan on top. Serve with crusty french bread, broiled for a few minutes with garlic and parmesan butter. Enjoy!

Taco Salad. Make the ground beef like you normally would and then mix in some packaged seasoning. I like to add a little extra chili powder! Get a can of black beans and a can of sweet corn. Drain and rinse both cans and mix together in one bowl. Get some tortilla chips, and layer on the bottom of a plate. Add shredded lettuce and the corn/bean mixture. Place a layer of the taco meat, then some grated cheese and hot salsa. If you like, add some tomatoes, onion and jalapenos. This makes for a great dinner!

Shepherd's pie.
Chopped onion, garlic, mushrooms, if any, saute. Add the meat and brown, then add green beans or some vege for 5 mins. Meanwhile, boil the potatoes, then mash the potatoes with butter, black pepper, and line a baking dish with 2/3rds of the mashed potato.
When the meat has cooked well, add a can of cream of mushroom soup (or any cream of something, other than cream of potatoes) and mix thoroughly, then pour that mixture into the center of the baking dish that is already lined with mashed potato. Cover the meat part with the rest of the potatoes. If you have some cheese, sprikle some grated cheese on top (cheddar is best).
Now, pop in the over for 40 mins at 350 degrees.
Serve...Yummy. Save the rest for midnight snack or tomorrow.

How about something healthy like a salad and a grilled burger? Here's a salad recipe (doesn't have ground beef, but tasty anyway.)
SPICY CRAWFISH ARTICHOKE JAZZFEST SALAD offers spicy crawfish (sautee' in Tobasco or Red Hot Hot Sauce), Roma tomatoes, hearts of palm (artichokes), and toasted pecans on a bed of lettuce.

I brown the ground beef and add seasonings to taste. I then bake a bunch of potatoes. I take the ground beef, butter, sour cream, cheese, onions and/or anything else you like and serve them over the baked potatoes. It is easy and tastey!!
