You can cook corn on the grill a couple of different ways. My two favorites are: cook the corn with the husk on it still; or take the husk off and wrap in aluminum foil. You can add butter, spices, or even Parmesan cheese inside the foil!
Other veggies are a little different to cook. You need to make sure they are in long slices, so they don't fall through the grill. My favorites are zucchini and squash. I rub a little olive oil on the long slices and then sprinkle with different seasonings. I recommend rosemary and salt and pepper!
Finally, if you are too nervous about over-cooking the veggies, you can always put any vegetables in the aluminum foil bags.

We are mostly vegetarians here, and live in So Cal so we grill produce ALL the time! I've grilled asparagus, lettuce, cabbages, bell peppers, hot peppers, bulb onions, green onions, broccoli is a favorite, artichokes, garlic, and more
Then there's the fruit! Fresh works best. You can slice or halve any of these. Peaches, pineapple (yum!), pears, (apples don't work so well, but the softer Anjou pears do), avacado, tomatoes, papaya, mango....actually, I'd probably try anything fleshy and see how it goes.
Here's the key: Hot grill, lots of Olive Oil (other oils don't stay lubricated enough for the grill so beware!), don't walk away, lay the piece down and don't move it around, if you want flip it over and repeat!
The thing about fruit is that you can grill one side to get that wonderful carmelizing, then serve with sour cream, whipped cream, or just drizzle the grill marks with honey. It'll really impress people.
The veggies can be tougher because some are smaller pieces. If you want smaller pieces, stop by any supermarket and get one of those disposable aluminum veggie pans...they have holes in the bottom so you can lay it right on the grill. You get all the smokey flavor, no grill marks, and you don't "lose" pieces of your dinner into the fire! LOL Be sure to use lots of oil, though, because aluminum causes sticking if you don't!
For potatoes we squewer them with metal squewers to make sure they cook all the way through. Or you can pop them into the microwave (before you leave for the park) and nuke for a couple of minutes. Not until done, just enough to speed up the grill cooking time.
Onions can be sliced and laid right on the grill, just like fruit. Bell peppers and other peppers, too. My husband salts and peppers them afterwards. I've marinated them for 20+ minutes before grilling (mushrooms especially) and had them come out FANTASTIC!
People already responded to corn for you so I won't belabor that. But I do gotta say that Bobbie Flay from FoodTV says you don't have to remove the silks before you grill! I was surprised, I'd always done that. Soak husks, grill with them on, add herbed butter at the table....YUM!

got a great recipe for corn on the cob
wash and wrap the ear of corn in a slice of bacon
wind the bacon around the corn
wrap the whole thing in foil. set on the grill and turn after about 5 to 10 minutes. One day we left it there a long time.
It was delicious. add a pinch of salt before cooking
don't need to butter to make it taste good. veggie friends use the butter or margarine. don't want to offend anyone.
We took skrewers and put a slice of zucchini squash and mushroom and red onion square. use a pasty brush and cover in BBQ sauce. set on the grill in the back while you BBQ the meat. Delicious. We even made with artificial meat chili beans for are veggi friends. Want to keep everyone happy at a BBQ

Remove the "silk" from the corn. Soak the corn w/husks on in cold salt water for about 3 hours before grilling. Put corn on the grill...grill for about 10-minutes on each side. You can pull the husk down near the end of cook time to season it.
I do "veggie packs" Slice up your veggies, season and coat w/a bit of olive oil. Place it on a piece of aluminum foil brushed w/Olive oil..and fold up into a pouch. Place on grill for 20-30 minutes...depending on which veggies you use. IM if you have any questions. Good luck! Gotta love the grill!

Lay them on some tin foil, put some butter on them, wrap them up and lay them on the grill. I have a better idea though, why don't you just make a salad instead? Most vegetables are much more nutritious raw and personally, I find them more tasty too! Then you wouldn't have to worry about cooking them.

My personal favorite is to marinate my veggies in a mixture of 1/4 cup extra virgin olive oil, 1 Tsp of light soy (as opposed to dark), 1 Tsp of lime or lemon juice, 1 clove garlic crushed. Leave for an hour. Possible items include portabello mushrooms, asparagas, red peppers, summer squash, zucchini. Cut squash and zucchini into 1/4-inch thick strips. mushrooms can be cooked whole but they tend to absorb the oil mixture quickly. Depending on the quantity being cooked, you may need to double or triple the marinade. All items should be cooked directly on the grill so they need to be large enough to not fall through the grate. I prefer a medium heat and will cook them to tender perfection.

Soak the husked corn in water prior to putting it on the grill. Peppers can be done on the grill whole, just turn them as they brown, they're delicious. Portebello mushrooms can be done the same, just take the stem off and bruch some olive oil on them.

Wrap them in foil with some olive oil or other favorite oil. I like to include fresh herbs and spices. With the corn, leave it on the husk and grill it.

You can wrap the veggies in foil and put on the grill or you can put them on skewers and put directly on the grill without the foil. Just season them and put a little oil or butter on them so they don't stick.

For corn, remove husk and silks, wash. Mix together (for4 ears of corn) 2 heaping tablespoons margarine (melt in microwave) sprikle in garlic sat, parmesian cheese and parsley flakes to your taste. Slather each ear of corn, wrap in alum. foil separetly and grill 15 mins.
