Corn Bread Taco Bake
Yield: 1 Servings

Ingredients

1 1/2 lb ground beef
1 pk durkee taco seasoning
1/2 c water
1 cn whole kernal corn, drained
1 12 oz. size
1/2 c green pepper, chopped
1 cn tomato sauce 8 oz.
1 pk corn muffin mix 8 1/2 oz.
1 cn durkee french fried onions
1 2.8 oz. size
1/3 c cheddar cheese, shredded 1oz

Instructions

Brown meat; drain. Stir in next 5 ingredients; pour into a 8x12 inch
baking dish. Prepare corn muffin mix according to package
directions, except add 1/2 can French Fried onions. Spoon around
outer edge of casserole. Bake, uncovered, at 400 degrees for 20
minutes. Top with remaining onions and cheese. Bake for 2 to 3
minutes longer.


Crunchy Taco Bake
Yield: 1 Servings

Ingredients

1 lb ground beef
1/2 c onions, chopped
1 cn hot chili with beans (15 oz)
1 cn tomato sauce (15 oz)
1 cn tomato paste (6 oz)
1 1/2 ts chili powder
1/2 ts salt
2 c corn chips, coarsley crushed
1 c cheddar cheese, shredded

Instructions

Crumble ground beef in a 2 quart casserole. Add onions; microwave on
high for 4 to 6 minutes. Stir to break up meat. Drain. Stir in chili
with BEANS, tomato sauce, tomato paste, chili powder and salt.
Microwave on high for 6 to 8 minutes. Sprinkle 1 cup of corn chips
in 8x8 inch baking dish. Spoon meat mixture over chips. Top with
remaining corn chips. Sprinkle with cheese. Microwave on high for 1
to 2 minutes. Serve with lettuce and salsa.



Taco Bean Bake
Yield: 8 Servings

Ingredients

3 c red beans (already cooked)
1/2 c chopped onion
1 ts salt
2 ts chili powder
1/2 ts tabasco
1 cn (15-oz) tomato sauce
1 cn (15-oz) corn; drained
2 c shredded non fat cheese
2 c fat free baking mix
1/2 c fat free mayo
1 c nonfat milk
1/2 c egg substitute

Instructions

Preheat oven to 350. Saute onion, add beans (you may want to use more than
3 c beans), salt, chili powder, tabasco, tomato sauce, and corn. Pour into
Pam sprayed 13x9x2 pan. Sprinkle with cheese. Put baking mix in bowl, cut
in fat free mayo, stir in 1/2c egg substitute, and milk. Spread over bean
mixture. Bake 35 min or until browned nicely. Serves great with lettuce,
tomatoe, and fat free sour cream.



Taco Chicken Bake
Yield: 4 Servings

Ingredients

8 oz skinless boneless chicken
-breast; cut into 12 pieces
1/2 c chopped onion
1/2 c chopped green bell pepper
1 15 ounce can tomato sauce;
-hunt's
1 1/2 ts taco seasoning mix
1 ts dried parsley flakes
1/4 c sliced ripe olives; (1
-ounce)
1/2 c frozen whole kernel corn
1 1/2 c hot cooked noodles; rinsed
-and drained
1/3 c shredded reduced fat
-cheddar chees; (1 1/2 ounce
1/4 c land o lakes fat-free sour
-cream

Instructions

1). Preheat oven to 350 degrees.
2). Spray an 8x8 inch baking dish with olive oil-flavored cooking spray.
3). In a large skillet sprayed with olive oil-flavored cooking spray,
brown chicken pieces, onion, and green pepper, stirring occasionally.
4). Stir in tomato sauce, taco seasoning, parsley flakes, and olives.
5). Add corn and noodles. Mix well to combine.
6). Pour mixture into prepared baking dish.
7). Evenly sprinkle cheddar cheese over top.
8). Bake for 20 to 25 minutes.
9). Place baking dish on wire rack and let set for 2 to 3 minutes.
10). Cut into 4 pieces. Top each piece with 1 tablespoon sour cream.

Hint: 1 1/4 cups uncooked noodles usually cooks to about 1 1/2 cups.

Campbell's Soup Taco Bake


1 pound ground beef
1 can (10 3/4 ounces) Campbell's Condensed Tomato Soup
1 cup Pace Thick & Chunky Salsa
1/2 cup milk
6 flour tortillas (8") or 8 corn tortillas (6"), cut into 1" pieces
1 cup shredded Cheddar cheese (4 ounces)

In medium skillet over medium-high heat, cook beef until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk, tortillas and half the cheese. Spoon into 2-quart shallow baking dish. Cover. Bake at 400°F for 30 minutes or until hot. Sprinkle with remaining cheese. Serves 4.

a taco baked is called an enchilada
use the seasoning package and pour over it delicious
