Campbell's Soup Taco Bake
1 pound ground beef
1 can (10 3/4 ounces) Campbell's Condensed Tomato Soup
1 cup Pace Thick & Chunky Salsa
1/2 cup milk
6 flour tortillas (8") or 8 corn tortillas (6"), cut into 1" pieces
1 cup shredded Cheddar cheese (4 ounces)
In medium skillet over medium-high heat, cook beef until browned, stirring to separate meat. Pour off fat. Add soup, salsa, milk, tortillas and half the cheese. Spoon into 2-quart shallow baking dish. Cover. Bake at 400°F for 30 minutes or until hot. Sprinkle with remaining cheese. Serves 4.

All you need is some skinless, boneless chicken breasts and a few other ingredients...take the chicken and place it in a casserole dish. Sprinkle some salt, pepper, and parmesan cheese on top. Add a little bit of butter and a water to the dish to keep the chicken from burning on the bottom. Once the chicken has baked for about 40 min on 350...pour velvetta cheese over the top and let bake for about five more minutes. It's so good and gooey

Cheese Enchiladas
Sauce:
1/2 cup Chili Powder
3 cups un-salted Beef Stock
2 slices uncooked bacon, chopped
1 lb. Ground Meat
1 Onion, finely chopped
3 cloves Garlic, minced
1 tsp. Ground Cumin
1/2 tsp. Ground Oregano
1. In a blender, blend the chili powder with the beef stock until well blended.
2. In a medium sauté pan over medium high heat, cook bacon until crisp. Render the fat and add meat, onion and garlic. Cook until meat is brown.
3. Strain off any excess fat.
4. Add cumin, oregano and chili powder mixture to the beef stock. Cook for 30 minutes, by reducing one third. Keep warm.
Enchiladas:
1 1/2 lb. Grated Cheddar Cheese
1/2 large Onion, chopped
1/4 cup Canola Oil
12 Corn Tortillas
1 Tomato, chopped
2 Jalapeno, Seeded, and ribs removed, diced
2 tbsp. chopped Fresh Cilantro
1. In a mixing bowl, combine the cheddar cheese and onions
2. In a medium size sauté pan, heat the canola oil until warm.
3. Dip the tortillas into the warm oil and then into the sauce mixture. Place on a cutting board and evenly fill with the cheese mixture. Roll up and place in a baking dish. Top with sauce and bake in a preheated 350° oven until cheese is melted and everything is hot and bubbly.
4. Top with the chopped tomatoes, jalapeno and cilantro.

Salsa Chicken
4 skinless, boneless chicken breasts
4 tsp taco seasoning
1 c salsa
1 c shredded cheese
Preheat oven to 375. Put chicken in a lightly greased 13x9 inch pan. Sprinkle both sides of chicken w/ taco seasoning. Pour salsa all over chicken. Bake for 25-35 minutes or until juices run clear. Sprinkle with cheese and bake for 3-5 additional minutes.

Well of course grilled cheese, but If you want seomting more filling and grown up try this.
Spinach and Potato Frittata
2 tbsp olive oil
6 small red potatoes, sliced into desired size
1 cup torn fresh spinach ( I used packaged)
2 tbsp sliced green onions
1 teas crushed garlic
6 eggs
1/3 cup milk
1/2 cup shredded cheddar cheese (plus extra for topping)
salt
pepper
Heat oil in a medium to large skillet over medium heat.
Place potatoes in skillet, cover, and cook 10 minutes.
Add spinach, green onions, and garlic.
Season with salt and pepper to taste.
Cook 2 minutes
Beat eggs and milk in a bowl.
Pour into skillet over veggies.
Cover top with cheese.
Mix to scramble eggs.
REduce heat to low, cook covered for 7 minutes or unti eggs are cooked to desired firmness.
Top with cheese and maybe have a side of Ketsup.

Grilled cheese sandwiches with a cup of vegetable soup. yes, I know. It's summer and soup is not that desireable in summer.
Or how about the same grilled cheese sandwiches and a side salad.
Don't like sandwiches? Not a hearty-enough meal?
How about make spaghetti like you normally would. Then, put it in a baking pan, sprinkle lots of your favorite cheese on top, and bake at 350 degrees for 30 minutes. Have garlic bread and a caesar or greek salad on the side.

Simple, fairly quick, and tastes great.
EGG & CHILI CASSEROLE
10 eggs
1/2 C butter
1/2 cup flour
2 four oz. cans chopped, mild green chilis (Ortegas)
1 tsp salt
1 pt. cottage cheese
1 1/2 lb mont. jack cheese (shredded)
Grease 9x13 pan lightly.
Whip eggs until blended.
Add remaining ingredients.
Stir together.
Pour into pan.
Bake at 350 until set. (30-45 min.)

From start to finish approx. 15 minutes.
1 can chunky white chicken
1 can cream of chicken soup (make per directions on can)
tortilla chips
Make soup as directed, adding can of chunky chicken. Crush tortilla chips into bottom of baking dish, pour soup mixture over tortilla chips. Top with shredded cheddar cheese and bake at 350 degrees until cheese is melted.
Serve with saled and garlic toast.

Swiss Fondue : melted hot Swiss cheese with garlic, spices and white wine. Only dip fresh baked bread cut in cubes in the cheese over a Chardonnay. Simple and DELICIOUS !

Any kind of pasta in white sauce with cheese.
Boil pasta (fusili or penne whatever you like), make sure to add salt and little bit of olive oil.
While the pasta is boiling, in a sauce pan, add 1 large table spoon of butter, stir in 2 tablespoons of flour (you can substitute wheat flour as it healthier). To the roux (butter-flour mixture), add a cup of warm milk, keep stirring so that you get a smooth consistency. Use can use a whisk to get rid of lumps. For flavour, add some dried her like oregano, chilli seeds or paprika, salt to taste, pinch of sugar, black pepper and grated cheese. Toss the drained pasta in the white sauce and serve hot.
To make it more wholesome, you can add veggies like brocolli, mushroom, baby corn and bell papers to the pasta, which have been prepared seperately, with garlic in olive oil.
