i have spinach,tomato,carrot,potato,brinjal,cabbage,capsicum in the pantry....and chicken,milk,cream and most spices at the moment...suggest a good soup and a meal too...healthy stuff...

I'm a diabetic too (sucks) I make soup with chicken broth chicken,squash, zuchinni, spinach,onion,corn and tomato plus a couple of dashes of hot sauce then when I put in a bowl top it with lots of shredded cheese, any kind will do. that's it

Easy Lo Cal Chicken Potato Soup
This is so easy and so hearty. It's pretty much a dump everything in the pot soup.
3 boneless skinless chicken breasts
3 cups water
2 cups chicken broth
1 large yellow onion, chopped
4 celery ribs, chopped
8 small red potatoes
16 ounces fat free sour cream
1/2 teaspoon rosemary
3 teaspoons parsley
2 tablespoons Season-All salt
1 packet goya brand ham flavoring (optional)
1 teaspoon salt
1 tablespoon pepper
16 ounces frozen corn kernels
8 ounces broccoli florets
1 ounce fat-free cheddar cheese, grated



1. Boil chicken in water and chicken broth with seasonings until cooked through.
2. Remove and cut or shread into small pieces. Lay to the side.
3. Boil potatoes, celery, parsley, onions, ham flavoring (optional) and corn in the stock.
4. Once potatoes are done add the chicken back in with the 8oz. of sour cream and broccoli. Simmer for about 20 minute
5. Add cheese to the soup once it's been spooned into the bowl.

If you don't have some of the ingredients, just omit them..(like the ham flavoring, who has that on hand??)..Throw that spinach in here too.. just make it a big pot luck soup. But this recipe will give you the basics..Enjoy.

I would grill the chicken. Chop the tomatoes and spinach along with some basil onion if it is available. Mix the vegetables and basil with a small amount of olive oil and top the chicken. Srinkle it with parmesan cheese and broil it in the oven until it begins to brown.
