The reason why they open slowly is because it is actually transferring data to your machine before it fully opens the opening program (Excel or Word in this case). The best way to remedy this is to save the file locally, and then open it from there. It will be a lot quicker, since the resources will be available to the program from your local machine.

Browse out to the file directory where the Word/Excel files you are opening on the network are located. Look at the file size. Anything under 10MB should open quickly across a standard 100mb wired network.
If you are trying to open these files across a wireless network you may have a weak signal.
Try the following two tests:
1) Try just copying the files from the network down to your local PC. If this is quick then the network is probably not the problem.
2) Try opening the files in Notepad. don't "save" the files from notepad as it will corrupt them. If Notepad can open the files over the newtork quickly then the probably may be with your MS Office installation.
General advice: Make sure your MS Office software is fully patched. You may even need to re-install it.

You have to check how fast is yoru connection, and where is the file located phisically (I mean the computer). This type of problems are typically not related to a singular type of files, try opening other files that are also about the same length.
Try copying the file to your local computer, it should take just about the same time that it takes to open the file through the network. The problem then becomes that Word and Excel are also saving the data through the network every so often, so word or excel may behave slower than normal.
