well, if you're eating veggies or meat, its calories, carbs, and saturated fats that you really need to be aware of. as for specific recipes, i'd go to www.foodtv.com and see what they have. you can do searches for things with whatever ingredients you want to use, and they'll be a ton of good ones. or just use the word "vegetarian". good luck!

Go to ediets.com and let them develop a veggie diet that will still meet all her nutritional needs. It is like $5 a month and they provide you with a daily meal plan and the recipes for each dish. Simply eliminating meat is not going to guarantee weight loss, she needs to have protein substitutes to maintain good health.

You might as well cook tofu vegie soup......
1 Tofu, cut into cubes
1 medium size carrot, cut into cubes
3 stocks celery, thinly cut
dried mushrooms, cut into strips
1 beated egg
1 chicken cube
Simply boil 3 cups of water with chicken cube, tofu, carrots, celery and mushrooms for 5 minutes. Then add the egg. Serve.
Yummy.....

Here's another one......
Mash the tofu and mix with 1 beaten egg and 1 grated carrot. Put in a molder and steam in a steamer or deep fry. Serve with mayonnaise or catsup.

oh yummy!! I like to throw together some zucchini, squash, carrots, beans...and whatever other veggies you love. Put them in a pan with a dash of olive oil and some chili pepper...yummy. Also, Tofu dice it up, put a spicy sauce on it. Sautee some spinach and mushrooms, get some egg noodles and put those all together. Use olive oil (it's good for you).

Add veggies to baked goods. You'll never even taste this zucchini in these brownies or perhaps the sweet potato in these cookies.

Just eliminating meat from your/her diet isn't necessarily going to cause weight loss. There are plenty of meatless dishes out there that pack on the fat and calories.

But if she wants to go meatless, you can't beat VegWeb!
