I am throwing a party in a couple weeks and we can all get a bit crazy...but we also get hungry after we start drinking. We usually grill out but I am in an apartment and don't have a grill, and ideas on some food?

- Layered taco dip with nachos. A hit at our party last week.

Old El Paso Layered Bean Dip


Yield: 16 servings
Ingredients


2 cn Old El Paso Refried Beans
1 lb Ground beef
1 pk Old El Paso Taco Seaasoning
-Mix
3/4 c Water
1 1/2 c Shredded lettuce
2 c Shredded cheddar cheese
1 cn Old El Paso Thick 'n' Chunky
-Salsa or Picante

--------------TOPPINGS------------------

Old El Paso Pickled Jalapeno
-Slices
Sour cream
Guacamole
Ripe, black olive slices
Old El Paso Tortilla Chips


Instructions


1. Spread refried beans on bottom of 14" serving platter.


2. Brown ground beef in skillet on medium heat, drain. Add taco seasoning mix and water. Cook and stir on medium heat 10-15 minutes. Spread over refried beans.


3. Arrange layers of lettuce, salsa and cheese on top of meat. Garnish with desired toppings. Serve with tortilla chips.


Makes 14-16 appetizer servings.

Omit guacamole to save money. I did and recipe was so good, there were no leftovers at the end of the night.



Spinach dip with bread cubes - Always another hit.

KNORR SPINACH DIP

1 (10 oz.) pkg. frozen chopped spinach, thawed (do not use fresh)
1 1/2 c. sour cream
1 c. mayonnaise (I use Hellmann's)
1 (4 oz.) pkg. Knorr vegetable soup mix
1 (8 oz.) can water chestnuts, finely chopped
3 green onions, finely chopped
Loaf of pumpernickel bread

Squeeze spinach until dry. In medium bowl, stir together spinach, sour cream and soup mix. Add finely chopped water chestnuts and green onions. Cover and refrigerate 2 hours or overnight. Cut slice from top of round loaf of pumpernickel bread, hollow out loaf to leave shell to contain dip. Use bread removed from shell and top slice to cut into bite size pieces. Butter inside of bread shell, fill loaf with dip and place on platter and surround with bread pieces and variety of raw vegetables. Then...GET OUT OF THE WAY!!! After the dip is eaten, enjoy the dip soaked bread shell as well.

My tip: Add a clove or two of grated garlic and also serve sourdough bread. Yum!

Assorted meat, cheese, fruit, and veggie platters. Make a sweetened sour cream dip for the fruit. Just add sugar or Splenda until you get the desired sweetness to the sour cream. It's cheap and easy.
For dips, just buy packets of dip powder and sour cream and mix together. Or mix sour cream with a packet of onion soup mix.

Make some Jello shooters - I know it's not food but it's an awesome treat and cheap to make. I make some with cheap flavoured wine and they were the biggest hit.

Just an idea is simple and easy shrimp that is rolled in butter and garlic and then wrapped with bacon.

Just buy shrimp and butterfly them (cut down the back and remove the big vein)
mix some butter and minced garlic on a bowl
spread a little on the inside of the butterflied shrimp and wrap with a good piece of bacon.
Then put them on a tray and put int he oven till the bacon is crispy and the shrimp have curled and are pink.

It is good and makes people think you did have a grill.

Or go with the easy stuff and buy something at the store already made.

Real Original Chex Party Mix

This is called 'Real Original' because it is the recipe taken directly off the back of a 1950s Chex cereal box. For the updated recipe, go to Chex Party Mix, which contains pretzels and bagel chips.

INGREDIENTS:
1/3 cup butter
1 Tbsp. Worcestershire sauce
1/4 tsp. salt
1/8 tsp. garlic salt
2 cups Wheat Chex square cereal
2 cups Rice Chex square cereal
1/2 cup peanuts

PREPARATION:
Preheat oven to 300 degrees F. Melt butter in a shallow pan. Stir in Worcestershire sauce, salt, and garlic salt (not garlic powder). Add Wheat Chex, Rice Chex, and nuts (peanuts, pecans or cashews). Mix until all pieces are butter coated.

Place on a shallow baking pan with sides. Heat 30 minutes in a 300 degree F oven, stirring every 10 minutes. Cool...enjoy!"

Buy a can of refrigerated crescent rolls and a package of Lil' Smokies sausages. Tear the crescent rolls into strips and wrap around the sausages. Bake till the rolls are brown. Serve with hot mustard and/or cheese dip.

Or you can put the sausages in the crockpot with equal amounts of mustard and apple jelly. Let it cook till the jelly is melted. Serve with toothpicks.

Or make tiny shishkabobs......get cute toothpicks and put a chunk of ham, a piece of cheese and a chunk of pineapple on each one.

Or you can make 7-layer dip. Layer these ingredients on a pretty platter in this order and serve with tortilla chips: refried beans, guacamole dip, sour cream, salsa, chopped green onion, chopped tomato, and cheddar cheese. Use whatever amounts you need for the number of guests. You can't screw it up! :-) Have fun!

Usually finger foods would be the best bet. Since it's a drinking party, the spotlight should be on the drinks. Savory foods go best with most drinks, so I'd say go with appetizers/hors d'oeurves.

The BEST bean dip ever.. always a HUGE hit! I usually make the recipe for ALOT of people, but don't be afraid to cut it in half, although, you can NEVER make too much....

1 HUGE can refried beans, and 1 small can
2 8 oz packages of cream cheese
2 bags shredded mexican cheese
Jar of jalepenos
2 small cans chopped black olives
1-2 cans sliced black olives
sour cream

heat up the beans and mix in all the cream cheese and one bag of shredded. mix until melted and well blended. then add chopped black olives. if desired, add some jalapenos and juice now as well.

put bean and cheese mixture in a LARGE bowl and "frost" with a layer of sour cream. cover with the remaining bag of shredded cheese, and then cover that with jalapenos and sliced black olives

serve with lots of chips

this is ALWAYS a hit... and such a simple recipe....

Great snacks in a small place, are of course chips, vegies and dip. Nuts are always good. And if you want food, make up a big batch of BBQ's, have them in a crock pot keeping warm, so when you get the munchies, you have something tasty to snack on. Have fun!

Plan a theme party. If you like mexican have chips, salsa, guacamoli, and refired beans
If you are more into lual type things have fruit with fruit dip and chicken kabobs, Mix fruity drinks
You could go chinese and have won tons and sushi and have rice wine.

Usually, I don't eat, until I get a good buzz on and want to come down. I get simple things like pizza, buffalo wings, chips, dips etc.
