The St. Paul sandwich is a type of sandwich found in a few Chinese American restaurants in St. Louis, Missouri. The sandwich consists of an egg foo young patty served with lettuce, pickle slices, mayonnaise and tomatoes between two slices of soft commercial white bread, such as Wonder Bread. The origin of the sandwich is unclear; despite its name, the sandwich has no connection to St. Paul, Minnesota. It was invented in St. Louis, Missouri and is usually only available in Chinese restaurants in the St. Louis metropolitan area. However, The St. Paul sandwich can be found in San Francisco and varying Chinese eateries nationwide. This sandwich was featured in the PBS documentary Sandwiches That You Will Like in 2003.

The ST. PAUL sandwich is simply a egg foo young pancake(scrambled egg+bean sprouts) on white bread usually served w/lettuce, tomato, and pickle. The sandwich makes an inexpensive light lunch that can be prepared very quickly for those on a tight lunch schedule. It proves that you don't have to sacrifice nutrition or taste for the drive through burger.
The best place in town to get the ST. PAUL is at the MAI LEE restaurant. I have enjoyed eating there for years. Be careful in the Mai lee, you might go in for one thing and b4 you know it the aroma's hit your empty tummy and your ordering for two! Here's the address and ph #.
