I don't, and I eat pretty healthily in terms of not large amounts of processed food or saturated fat.

Our bodies are designed to eat the fat with the meat - people have been doing it for millenia without problems. If is only now there are so many other bad things available for us to eat that it becomes a problem.

Also, fat isn't rubbery if you cook it right - we always hold the steak on its side on the griddle to cook off most of the fat and it makes it crisp and delicious and more healthy!

It all comes down to personal preference and cooking styles.

The human body gets about 10% of it's calories from fat, anything more and it stores it in reserve.
Most people take the skin/fat off because they are either health conscious, have already exceeded the fat limit for that day or for certain cooking styles.
The american diet has already enough fat, so omitting as much as possible is a good habit to get into.
You are right about losing flavour, but there are alternative ways to maintain and even increase the flavour without the need to add butter, fat, or grease etc. Marinating, steaming, roasting, poaching, are a few that I can think of that don't require fat to flavourize food.

Well, some people actually think health is more important than the happiness that is created when you eat a nice hearty steak or consume some nice flavorful calories! Lol!!!! Seriously, people are too worried about being "perfect" and thin to eat what they want! Granted, some people have real health issues that prevent them from eating all the good stuff, but I think most just don't want the extra pounds.

here's a couple that my family loves Beef & Vegetable Kabobs 1 lb Top round steak; cut into 1.5 inch chunks 1 md Spanish or vidalia onions, quartered and separated 3 tb Soy sauce 1 tb Dry sherry 1 tb Salad or olive oil 1 tb Chili sauce 1/4 ts Ground ginger 1 md Zucchini 1 md Straight-neck squash 1 md Red or green pepper 1/2 lb Medium mushrooms 1/2 lb Cherry tomatoes 3/4 c Italian dressing In a medium sized bowl, mix the first 7 ingredients. Cover mixture and refrigerate at least 2 house, stirring occasionally. About 1 hour before serving, prepare the grill for barbecuing. Cut zucchini and yellow squash into 1 inch chunks. Cut pepper into 1 inch pieces. On long skewers, alternately thread zucchini, yellow squash, peppers, tomatoes and mushrooms.I usually use only one tomato and 1 mushroom per skewer to keep the weight down. On separate skewers, alternately thread beef and onions. Save the marinade for later. Place vegetable and meat skewers on grill over medium heat. If you have a 2-level grill, place the meat skewers on the lower level and the vegetable skewers on the top level. Cook about 10 minutes, brushing the meat and onions with the reserved marinade and the vegetables with the Italian dressing. Turn skewers several times while brushing frequently. A good way to tell that the vegetables are done is when the tomatoes start to split. This is a great meal served with curried or regular rice and a fresh fruit salad. Barbeque-spiced Grilled Tenderloin Steaks 1 tb Brown sugar 1 tb Sweet paprika 1 ts Dry mustard 1 ts Ground allspice 1/4 ts Pepper 2 ea 6 oz 1" thick Tenderloin Steaks Combine first 6 ingredietns in small bowl. Can be prepared 1 week ahead. Store in airtight container. Prepare barbeque high heat. Rub spice mixture generously into both sides of steaks. Grill steaks to desired doneness, about 3 minutes per side for medium-rare.

Your "eat anything you want" statement might apply to you right now, but you will see that with age it becomes less and less true.
If you continue to eat as you wish, all the fat that is so "tasty" is going to clog your arteries and cause heart problems. You will probably also become Diabetic, and run the risk of blindness, heart disease, limb amputation, and suffer from many other life-threatening ailments. I urge you to get reliable information on the subject, as you can save yourself a lot of misery down the road by adopting healthy eating habits NOW. Don't forget...you are what you eat!!
