put the eggs into water basin. The good eggs sink while the bad starts floating.

At the Egg farms they use candling machines.
Basically the egg passes over a strong light. The colors that show through the egg tells the person using the machine if the egg has spots, large yolks, double yolks or other abnormality's. Then they are graded on their shells and size.
Or
do you just want to know how to pick out a dozen eggs.
If this is the case you don't need name brand that does not
mean any thing.
Just check to make sure they are not broken, Get the large or extra large they are worth the few cent more.

Bad eggs, not good ones, float. This is because as they start to break down, gases start to build up inside the egg and this is what makes them float rather than sink.
The rule is that if it's sitting flat on the bottom, it's very fresh, if an end starts to bob up, it's about halfway to the trash bin (but makes the best hard boiled eggs as the shell comes off easier when it's not super fresh) and when it floats, toss it.

Open the case, examine for cracks and breaks.
Close the lid and gently flip over the carton and open from the bottom to see the under side of the eggs.
Gently clode the bottom and ease the eggs back into place.

Eggland's Best are really good tasting eggs. As far as getting ones not broken, open the carton at the store. You're allowed to do that w/eggs.

By seeing trough light like sun or lamp, then you can see the silhouette. If the condition is good, the silhouette only has one "good ball" inside. otherwise the silhouette is not like a ball, this is bad egg.

If you're talking about finding "blood spots" in them, hold them up to a light and look for dark spots.
