The hole helps the doughnut fry better. It gives the dough the right 'depth'. Without the hole they would have overcooked outsides or doughy insides.

Back in the day, doughnuts were solid masses of fried dough with no hole in them. In most places in the world they still are, however, in North America they have the hole, partly because of the extruding process used in making them as someone earlier had said, and bakers found it easier to remove the doughnuts from the hot fat by sticking a dowel through the hole and lifting it out from a distance, so as not to get burned.

I believe it just helps it cook more evenly..but there is an old tale they tells that the doughnut has a hole because a sailor was eating a pastry and during a storm he had to stick it on his steering wheel...and there came the hole in the doughnut.

In the early bakeries, they put the donuts in dowels, or just round wooden poles -- and that's how they carried them to sell them. Once you made them, you would go down the street with them, and take them off the dowel and sell your donuts. You could walk with them or have them on a wagon, and you could then sell them to restaurants. If you had a cart and you're a vendor, if you put too many donuts together they'd all squish up. But with a hole, they didn't squish up. When they got cardboard boxes, then they made them without holes.
