Taking deep breaths slows your heartrate. When you are falling asleep, your body is shutting down and your heart rate slows. I've always noticed that when I take the 'one deep breath' I'm about 2 minutes from passing out.

Edited to add: by shutting down, I mean "falling asleep". Thought I would clarify :)

The first answerer is right. But also by taking that deep breath you are also bringing an extra dose of oxygen into your bloodstream. You also take several deep breaths while you're asleep. This is basically to help you rest, and why it is so dangerous for people with sleep apnea--because they don't get enough air.
