Because it goes REALLY sour, and you eat it and the high bacteria or fungi content kills you off.

Sour cream has bacteria, but not as high as the bacteria past the expiration date.

Or fungi. I don't know.

Well I get what you're saying because of the word SOUR, you're thinking that if the name is sour cream then it shouldn't have an expiration date on it . Sour Cream has dairy products in it if it is set in a hot place then it will ruin.

Because it is a dairy product, and even though sour cream is made by microbes it still expires.

Because it has some dairy in it, and if it goes past its expiration date, it won't taste as well as it would as if it had been bought fresh. And if I'm correct, several weeks past it's expiration date, you might see something growing on it (thanks to my aunt who forgot to throw it out. Thank goodness I looked before I used it). And I must say, bad sour cream has the worst smell.

Because sour doesn't mean that it has gone bad. Bacteria grow on all perishable foods, as well as molds. The expiration date simply means that it's safest to throw it out at that point because there will likely be enough bacteria to make you sick.
