Horses were used much more often than bicycles. Horse were used extensively by the Germans, Russians, Poles, Japan, Italy and all the Balkans. The horse was used to ride, as a draft aninmal to move supplies and artillary and for food. The British consumed large amounts of horse meat during the war as beef and muton were not easy to obtain.
Horses also supplied much of the leather that all the armies of the world used. Horse meat was also canned and used in US military rations. Much of the Corned Beef that American GI s ate was actually Corned Horse !

There was only one US regiment on horses, so I would think bicycles. I'm not sure about Russia & Italy though.

It was not uncommon for horses to pull field artillery and supplies through most of Europe. Bikes were ok for short dispatch travel.
