Actually what you are describing is a stir fry. Fried rice has eggs stirred into it.
I call it "refrigerator stir fry". I start with a couple link sausages cut into rounds. Then add onions and whatever happens to be in the refrigerator - green peppers, celery, turnips, a small amount of grated carrots, sliced cabbage, practically anything I might put into a vegetable salad. The total is about 1 1/2 cups of vegetables. When this is about cooked, I add a scant cup of cooked rice and about a quarter cup of cooked beans. I stir them in and then add either soy sauce or worchestershire sauce, or stir fry sauce, or whatever suits my fancy. I've gone thru' periods where I've used chili sauce or shrimp cocktail sauce. When my wife was alive, I nearly always used worchestershire sauce because she was on a low sodium diet.
Basically what I do was dump, taste, correct the seasoning. 8-)
BTW, this is one of my standard breakfasts.

The simplest fried rice I ever learned to make was on the back of a jasmine/but name brand bag of rice. Since it was fried rice it was oriental flavor but the instructions made it so simple and It seems you already have the gist of it. I would steam the potatoes in the microwave or steamer first and let them dry. The recipe I followed had you fry hard or saute the meat or seafood, throw in 4green onions chopped & what ever other herbs or seasonings you decide. The oriental liquid at this point was a mixture of 2 tbl. spoons fish sauce 1 1/2 tbl. spoons soy sauce. Then you mix in to coat a cup of already cooked rice. I guess you could experiment with the sauce on the side. Should you go with the oriental seasoning liquids? Or combine some of it with worchestshire sauce or just the worchestshire. Maybe some of this may bring back more memory. Although, this recipe you mentioned reminded me of this other recipe that started out being called Lion's head soup. It had large meatballs in it with bok choy cabbage and cooked together with a broth and worchestershire & soy sauce flavors. Later it was converted to cut pieces of smoked beef sausage and regular cabbage with sauteed onion and bell pepper and diced potato and the same broth and flavors. But the recipe was still great. You can work on the fried rice of your mom's if you just stay focused on basic fried rice.

My mom made something similar, but used ground hamburger or ground sausage instead of the sausage rounds. She didn't use the potatoes, but did use Worcestershire lightly after the concoction was made. She called this fried rice, too.
I can't make it like she does, but have found two products that tastes the exact same: Tony Chachere's Creole Dirty Rice Mix or Zatarain's Dirty Rice Mix. Depending on where you are, you can purchase it as your local grocery store, or you can order it online. It has the seasonings, onions, peppers...everything you need to make a great dish. And you could even add sausage rounds instead of ground meat it you wish. Good luck, and enjoy!
