Almost any salad dressing that isn't creamy (like Caesar) works well as a marinade. It has the two components of a good marinade: acid and oil. Mix these two things together and add spices or other flavouring and voila!

Suggestions:

Vegetable oil, balsamic vinegar, finely chopped fresh basil and oregano (Mediterranean)

Orange juice, soy sauce, sesame oil, pinch of grated ginger (Asian)

Tomato juice, olive oil, crushed fennel seeds (Italian)

Lime juice, lemon grass, coconut milk (Thai)

Mix in whatever quantity you'd like, but the oil is usually a minor player. Enjoy!

I use a good vinegrette dressing.....make sure to poke holes in the chiken first and let it sit for as long as possible. Overnight works the best. Otherwise, just water down some bbq sauce and do the same to it. It ends up being nice and juicy.

A little soy sauce, brown sugar, garlic and ginger always make a basic teriyaki.
Balsamic, garlic and a little olive oil is good too.
