We used to make cheese sticks, but not on a stick. Just cut the cheese (usually mozzarella, cheddar or american cheese) into 1/2" wide sticks about 3"long, roll in eggs(mixed with fork) then in flour (or you can do breadcrumbs) and place them in hot oil to fry, just until they are browned on all sides...I guess then you would insert a wooden skewer or popsicle type stick.

1/2 c Flour
1 lb Swiss Cheese ,No Salt Added
1/2 c Skim Milk
1/4 c Egg Substitute,Or One Whole Egg
2 t Sodium Free Baking Powder
Cut cheese into 1/2 inch sticks. Heat oil in deep fryer or saucepan to 375 degrees. Combine flour and baking powder. Beat 1 cup of flour mixture, milk and egg with fork until smooth. Coat cheese sticks lightly with dry flour mix and insert round wooden pick in each cube. Dip into batter, covering cheese completely. Fry several sticks at a time, turning carefully until golden brown (1 to 2 minutes). Drain on paper towel.
Yield: 12 Servings

FRIED CHEESE STICKS
1 block of any hard cheese
1/2 cup cornmeal
1/2 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon tabasco
1 medium egg
1/2 cup finely grated cheese
Buttermilk
Place cheese in freezer for one half hour. Remove cheese and cut into 1" thick strips just before cooking. Mix batter; add corn meal and flour, salt, tabasco, egg and add buttermilk until at a consistency slightly thinner than toothpaste.
Dip cheese sticks into batter (use toothpicks to handle them) carefully place in a pan of hot oil making sure that oil covers good, do not put in to many at once or they will stick together. When browned evenly remove and immediately roll in grated cheese.

I was thinking if you got hotdogs, split them up the middle and sandwiched a stick of cheese in between then use three toothpicks to close it around a popsickle stick, dipped it in the batter and then dipped it in a pan of hot oil. There you go, fried cheesedogs! Remember to remove the toothpick before serving.

take some mozzarella (a block) cut into long rectangles and dip in beaten egg and then in Italian bread crumbs and fry like a homemade corn dog.Serve alone or with ranch, red sauce, or honey mustard
