Light & Lemony Chicken Saute

The fresh taste of lemon and green onions makes this chicken mouth-watering good.



4 boneless skinless chicken breast halves
2 tablespoons LAND O LAKES™ Fresh Buttery Taste™ Spread
1 teaspoon chopped fresh garlic
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons lemon juice
8 (1 cup) green onions, sliced 1-inch
1 cup fresh mushrooms, halved
Lemon slices
Fresh parsley
Flatten each chicken breast half to about 1/4-inch thickness by pounding between sheets of waxed paper.
Melt Fresh Buttery Taste™ Spread in 10-inch skillet until sizzling; add chicken, garlic, salt and pepper. Cook over medium heat, turning chicken occasionally, until no longer pink (5 to 6 minutes). Place chicken on serving platter; keep warm.
Add lemon juice to drippings in pan. Add green onions and mushrooms. Continue cooking, stirring constantly, until heated through (2 to 3 minutes). Spoon mixture over chicken. Garnish with lemon slices and parsley.
Makes 4 servings.

Turkey salad

here is the amounts I use for 2 people for a meal. For a party I try for 1/2 steak per person and then add the other stuff to taste.

2 Smoked Turkey steaks, 1/2 to 1 turkey steak per person
- I use Dietz & Watson Smoked Turkey steaks (near the bacon or chicken nuggets in the grocery story) but you can get the deli to thick slice some for you too.
1/2 onion chopped small
Summer Savory - I give the top a good coating and then stir it in
Mayo - about 1 soup spoon per steak roughly - add it slowly so you don't get too much
Halved Grapes - lots!

Add in this order - i put the grapes in last so they don't get squashed and then gently stir one last time.

This is awesome in the summer time - very refreshing, low carbs, high protein. Fantastic!

Lime Cream Pie
Another 5-minute miracle from Eagle Brand. The perfect refreshing summer dessert to keep you out of the kitchen !

prep time: 5 minutes plus chilling time
servings: 6-8

INGREDIENTS
* 1 can (300 mL) Regular or Low Fat Eagle Brand®
* 1⁄2 cup (125 mL) lime juice
* Green food colouring, optional
* 1 cup (250 mL) whipping cream, whipped
* 1 9-inch (23 cm) graham cracker crumb pie crust, prepared


INSTRUCTIONS
* Combine Eagle Brand, lime juice and food colouring if desired. Fold in whipped cream. Pour into prepared crust.
* Chill 3 hours or until set. Garnish as desired
Lemon Cream Pie: Substitute 1/2 cup (125 mL) lemon juice for the lime juice and yellow food colouring, if using, for green.

okay, grocery list, 4 chicken breast(boneless skinless), kraft italian dressing, and kraft bbq sauce, 2 cups chicken broth, 2 cups minute rice, oregano, 1 small minced onion, black pepper.

serves 4 ppl

Okay pre heat oven at 375 degrees
in a small baking pan spread out 4 tables spoons of italian dressing to coat the bottom.
place chicken breasts ontop of dressing. then add about another 1/4 cup of italian dressing ontop of the chicken. then swiggle bbq sauce start at one end of the pan and squeeze up and down until you get to the end of the pan. then sprinkle with pepper. Put in oven for 45 min basting every ten min. you can use a spoon to scoop up the juices and put ontop the chicken this will help them from drying out.
While the chicken is cooking, boil the chicken broth with 1tbsp of oregano and the minced onion. Add rice(STIR) take off of heat and cover for 8 min. Then cook up your fav veggie
( asparaus or zuccini goes really well) when chicken is done, double check that its fully cooked and serve on top of the rice, use excess juice to dizzle ontop. dont forget the veggies and for a nice added touch, a light white wine goes very well with this dish.

This is my favorite summertime dish because it's so good and refreshing.

Creamy Cucumbers
3-4 large cucumbers, peeled and sliced
1/2 red onion, sliced thin
2 tomatoes, diced (optional)
1- 1 1/2 cups Hidden Valley Ranch or Cucumber Ranch Dressing

Combine all ingredients in large serving bowl, chill before serving.

Very tender pork roast with rice, bread and green beans. (Can also make cold pasta salad from a mix they have by the mac and cheese if you dont want rice)

Put 2 lbs pork TENDERLOIN in crock pot. Open package of lipton onion soup put on top of pork, flip pork. Add 1 cup water, 3/4 cup red wine (i use cooking wine), 3 tbls soy sauce. Flip again, pepper to taste. Top with crushed garlic (i buy this in the jar in the produce section). Leave garlic to cook on top. Cook low 4 hrs.

When almost ready open a package of Lipton flavored rice. Microwave as per direction. Same with green beans or corn. Open the can simmer on stove with a little salt and pepper (i add bacon grease to beans, butter to corn). Have a loaf of that store bought "homemade" bread on hand and you have a fast, cheap, good meal!!!

Best/Easiest Chicken Salad ever!!
3 12.5 oz cans of chicken
20 red seedless grapes (cut in 4ths)
2 oz. almonds (ltly toasted in oven)
1 stalk celery chopped
1 16oz bottle of poppy seed dressing

Put the chicken in a bowel and shred it up some.Add the other ingredients and mix well.... Poppy seed dressing last.
It's better the next day. Great on its own or on a sandwhich or croissant.
Even people who are not crazy about Chx salad tend to love it.

Tater Tot Casserole

2lbs hamburger meat
1 can cream of mushroom soup
1 package frozen tater tots
1 package sliced american cheese (you can also use shredded cheddar cheese)
salt and pepper to taste

Brown the hamburger meat. Drain off the fat.

Combine the meat, mushroom soup, and salt and pepper. Heat until bubbly.

Put mixture in a 9x13 baking dish. Put one layer of cheese slices on top (usually six slices). Arrange tater tots in rows along top until they cover the top of the casserole.

Bake at 400 degrees for 25 minutes.

This is really simple but one of my favorites.

FRUIT SMOOTHIE

1 banana
1 c. orange juice
1 c. milk
1 tbsp. honey
1 tsp. vanilla extract
Ice cubes (3 to 6)

Peel banana and break up. In a blender blend orange juice, milk, honey, and vanilla. Then add banana and ice cubes. Whirl about 1 minute or until smooth. Great for breakfast with toast. Don't let set too long, it separates.

chicken and veggie K-bobs

buy some chicken tenders (cube them)

use some mushrooms, bulb onions, bell peppers, jalepeno peppers, squash, tomatoes, corn, carrots, etc....

sprinkle with chicken fajita seasoning and grill (or bake in the oven with an ice cube in tin foil)....

boil some water - and make some minute rice

and for dessert - how about some fresh fruit or pudding - both easy and great tasting - or maybe both fruit and pudding!

I am crunched for time every night because I have exactly 2 hours to get my daughter fed, bathed and put to bed by her 830 bedtime - so quick meals are a must for me! and she eats meals like this - she just loves anything with rice - try a variety of different meats, veggies and rices for variations!
