Lime Broiled Catfish (Diabetic Recipe)
1 tablespoon margarine
2 tablespoons fresh lime juice
1/4 teaspoon freshly ground pepper
1/4 teaspoon garlic powder
2 catfish fillets (6-ounces each)
Melt margarine in a saucepan. Stir in lime juice, pepper and garlic powder; mix well. Remove from the heat and set aside.
Place fillets in a shallow baking dish. Brush each generously with lime sauce. Broil for 5 to 8 minutes or until fish flakes easily with a fork. Transfer to a warm serving dish; spoon pan juices over each fillet.
Makes 2 servings.

Fudgy Brownies (Diabetic)
6 tablespoons margarine
4 ounces unsweetened chocolate
1/3 cup skim milk
1/3 cup apricot preserves with NutraSweet® brand sweetener or apricot spreadable fruit
1 large egg yolk
1 teaspoon vanilla extract
1/2 cup all-purpose flour
10 3/4 teaspoons Equal® for Recipes or 36 packets Equal® sweetener or 1 1/2 cups Equal® Spoonful™
1/2 teaspoon baking powder
1/8 teaspoon salt
3 large egg whites
1/8 teaspoon cream of tartar
1/3 cup coarsely chopped walnuts (optional)
Heat margarine, chocolate, milk and apricot preserves in small saucepan, whisking frequently, until chocolate is almost melted. Remove from heat; whisk until chocolate is melted. Whisk in egg yolk and vanilla; mix in combined flour, Equal®, baking powder, and salt until smooth.
Beat egg whites and cream of tartar to stiff peaks in large bowl. Fold chocolate mixture into egg whites. Pour batter into greased 8-inch square baking pan. Fold in walnuts, if desired.
Bake in preheated 350*F (175*C) oven until brownies are firm to touch and toothpick comes out clean, 18 to 20 minutes (Do Not Overbake). Cool on wire rack. Serve warm or at room temperature.
Makes 16 servings.

My doctor put me on it because I have family members who suffer with heart problems and diabetes. I didn't have much trouble adjusting to the new eating habits. The main thing is get rid of white bread, and pretzels, and don't eat carbs without also eating something to slows your digestion like fiber or good cholesterols.

Most people need to see a new food on their plates about a dozen times before they eat it. You don't need recipes. A balanced diet is great. Lunch :Sandwich with meat and/or cheese. Add a few fresh spinach leaves for a green veggie. A piece of fruit for dessert. Use whole wheat bread and lean luncheon meats. A filling soup like Chili with cheese and crackers.A piece of fruit for dessert. A yogurt and some crackers.Add some leftovers from dinner and fruit. Dinners:Protein , veggies and carbs.Simple. Baked chicken,a green salad and a potato. Poached fish ,rice and squash. Lobsters with lemon and butter,a baked potato and salad.Yumm. Meatballs with sauce and a cup of cooked pasta.Add extra meatballs to make up for the tiny amount of pasta. A salad and fruit. BBQ ribs and corn on the cob.Cole slaw and watermelon.

Go to any mall close to you, and go into their bookstore...they should have cookbooks especially for diabetics. I could not tell you the best ones, but I do know ppl who have had to use those (if I wind up with pregnancy diabetes, I will be one of them) and none of them have complained.
