I like spicy as well as rich sauces!

Hash Brown Quiche
3 cups shredded hash brown potatoes
1/3 cup butter, melted
seasoning salt to taste
1 cup diced cooked ham
1/4 cup chopped onion
1 cup shredded Cheddar cheese
2 eggs
1/2 cup milk
salt and pepper to taste

Preheat oven to 425 degrees F (220 degrees C). Press hash browns onto the bottom and sides of a 9 inch pie dish. Drizzle with melted butter, and sprinkle with seasoning salt. Bake in preheated oven for 20 minutes, or until beginning to brown. In a small bowl, combine ham, onion and shredded cheese. In a separate bowl, whisk together eggs, milk, salt, pepper, and a little seasoning salt. When crust is ready, spread ham mixture on the bottom, then cover with egg mixture. Reduce oven temperature to 350 degrees F (175 degrees C.) Bake in preheated oven for 20 to 25 minutes, or until filling is puffed and golden brown



DEVILED EGGS
6 eggs
1/2 teaspoon paprika
2 tablespoons mayonnaise
1/2 teaspoon mustard powder
Place eggs in a pot of salted water. Bring the water to a boil, and let eggs cook in boiling water until they are hard boiled, approximately 10 to 15 minutes. Drain eggs, and let cool. Cut eggs in half, lengthwise. Remove the egg yolks and mash them together in a small mixing bowl. Mix in the paprika, mayonnaise, and dry mustard. Spoon mixture into the egg shells, cool and serve. You can also add pickle relish, minced olives, etc.

My personal favorite is the Mexican classic of Huevos con chorizo. Chorizo is a kind of pork sausage. The Mexican kind is very different from the Spanish or Portuguese versions. And buy a good quality, as the cheap stuff can be disgusting.

Remove the sausage from the casing and brown in a hot skillet. It has lots of fat, so you don't need to add any. When it's cooked, you can remove most of the fat, and add eggs that have been mixed for scrambled eggs. Then just scramble them in the sausage.

It's spicy and very rich. Enjoy!

Chilies Con Queso Strata

2 c. American or Cheddar cheese, shredded
1 c. green chilies, drained and chopped
5 slices bread, chopped
¼ c. onion, chopped
6 eggs
½ c. milk
1 c. tomato sauce
¼ tsp. garlic salt
2 fresh tomatoes, sliced

Combine cheese, chilies, bread and onions. Place in greased baking pan 6” x 9”. Blend eggs, milk, tomato sauce and garlic salt. Carefully pour over bread mixture in pan. Cover and refrigerate over night. This step must be done. Bake at 350° for 1 hour or until an inserted knife near the center comes out clean. Place tomato slices on top after about 30 minutes. Let stand 15 minutes before serving.

Okay this is one way I make them:

Chop half an onion or one small one.

Fry them in a little butter till the edges are reddish.

Add a few drops of tabasco sauce.

Add one teaspoon of tomatoe paste, stir and mix it all.

Now add 2-3 eggs and scambled it all, add salt to taste. Serve with slices of toast.

You can also do this exact thing but without the tomatoes paste.

Real tasty!!

would you like to try an indian egg curry? since you love spicy things?
boil 6 eggs and keep aside.
make masala for the gravy, in the following way,
2 big onions, 2 medium tomatoes, some garlic-ginger paste,2 green chillies, red chilli powder, garam masala of cardamom, cinamon, cloves,black pepper ground in a powder. turmeric powder.
in a deep pan, heat oil, stir fry onions which are finely chopped, add ginger-garlic paste, chillies slit-cut, when brown, add 1teaspoon red chilli powder, garam masala, and keep stirring till oil separates from the masala, pour some tomato puree, or chopped tomato, as per choice, add some boiling water. keep on medium heat. let it simmer.
peel the eggs, they should be properly boiled.
put them in thesimmering curry, only for a minute.
put off the stove, and remove the utensil down.
serve hot with either bread, or plain rice, by garnishing with coriander.

You can spice this up to your own taste.


Simple, fairly quick, and tastes great.

EGG & CHILI CASSEROLE

10 eggs
1/2 C butter
1/2 cup flour
2 four oz. cans chopped, mild green chilis (Ortegas)
1 tsp salt
1 pint cottage cheese (small or large curd)
1 1/2 lb mont. jack cheese (shredded)

Grease 9x13 pan lightly.

Whip eggs until blended.

Add remaining ingredients.

Stir together.

Pour into pan.

Bake at 350 until set. (30-45 min.)

Omlet in a Bag (keep in mind you only have to use ingredients you like...all my boys eat are ham, eggs and cheese but they do like "helping" chop)

2 eggs (my hubby eats 4)
2 slices ham chopped (or to taste, I use more)
chopped onion
chopped jalapeno
slices olives
chopped mushrooms
chopped tomatoes
cheese

Start water boiling in a large pot.
Crack eggs in ziploc freezer bag (gallon for 4 eggs, quart for 2 eggs) seal bag, shake to mix egg. I saute the onion, jalapenos and mushrooms in a little butter (we like the veggies soft). Add all ingredients to bag. Shake again. Add bag(s) to water when it is at a hard boil. 20 min. for 4 eggs, 13 min. for 2 eggs. Rolls out of bag ina perfect omlet shape!

Cheddar Broccoli Frittata
6 eggs, beaten
1 can (10 3/4 oz.) Campbell's® Condensed Broccoli Cheese Soup or 98% Fat Free Broccoli Cheese Soup
1/4 cup milk
1/8 tsp. ground black pepper
1 tbsp. butter OR margarine
2 cups sliced mushrooms (about 6 oz.)
1 large onion, chopped (about 1 cup)
1 small zucchini, sliced (about 1 cup)
1/4 cup shredded Cheddar cheese (1 oz.)
1 green onion, chopped (about 2 tbsp.)
MIX eggs, soup, milk and black pepper.
HEAT butter in large ovenproof nonstick skillet over medium heat. Add mushrooms, onion and zucchini and cook until tender. Add soup mixture. Cook over medium-low heat 8 min. or until eggs are set but still moist.
SPRINKLE cheese over egg mixture.
BROIL 4" from heat 2 min. or until golden brown. Sprinkle with green onion. Cut into wedges.
TIP: To make skillet ovenproof, wrap handle in aluminum foil.

Try cooking them sunny side up and melt a piece of cheese on top while cooking. Place on toast and top with sweet thai chilli sauce, yummy!
