'Dia duit' (Greeting - God be with you) is grammatically correct but the spelling of 'Dia dhuit' is nearer to the colloquial pronunciation used in a wider area.
English/Irish dictionay gives Dia dhuit as the spelling and foclóir Gaeilge/Béarla gives Dia duit. Both forms are acceptable.

It is the same for Dia is Muire dhuit (note spelling of Muire). (God and Mary be with you - the reply)

Is which means 'and' is often shortend to 's. All are acceptable.

Again with Conas atá tú, and Conas tá tú (How are you?) it is a matter of local dialect. Conas tánn tú? and Conas taoi are Munster dialect

More dialects of the same question:
Cén chaoi a bhfuil tú - Connaught
Cad é mar atá tú - Ulster
