I am in the middle of making an angel food cake (mix) and it calls for a tube cake pan: 375 degrees & 35-40 minutes. I don't have one, and was planning on using a 9X13 cake pan so I need to know the time difference, and temperature difference if any. Thanks!!

it will be less than 35 minutes, maybe 20 minutes, same temp., after 20 stick a knife or toothpick in the center of ur 9x13 pan and see if it comes out clean if it does its done, or press the center of the cake lightly with ur finger and if it pops/springs back up than ur cake is done, or as the cake (sides) slightly pulls away from the pan its done

Remember not to use a non-stick pan and make sure you cool the cake upside down. I've never seen a 9"x13" pan with "feet," so it may be tricky keeping the pan upside down while cooling if the cake baked into a dome above the top of the cake pan.

Some people say that you can cut time off of the total cooking time because your cake won't be as thick as one would be in a tube pan. However, the tube in the pan allows for better heat distribution, therefore decreasing the total cooking time. So, I'd start watching your cake at around 25 minutes, but I bet it'll cook for almost as long in a 9"x13" as the time indicated for a tube pan.

Be careful substituting a pan when the recipe indicates that a tube pan should be used, such as an angel food cake pan or a bundt pan. Generally the recipe requires this type of pan so the heat is distributed properly. This is necessary for the food to get to its proper doneness.

When I worked in a bakery back in the 90's we made angel food cakes in 1/4.
1/2 sheet pans. We put waxed paper on the bottom of the pan and did not grease the sides. The larger the pan the more mix you need. We baked ours and checked them with a toothpick, if it came out clean it was done. We then inverted the pans on 4 cans of canned goods, and let them cool, they turned out just fine.You should have no problem if you don't coat the sides of the pan and put a sheet of waxed paper in the bottom. Let the cake cool completely before you take the waxed paper off after you turn them out of the pan.

You can't make angel food cake in that kind of pan.

cut the cooking time by 10 minutes.. the temps stays the same , have you ever seen it in stores in a loaf, same thing keep an eye on it once it hits 25 minutes of baking time
