Ingredients:
***Crust***
1/3 cup unsalted butter, melted
1 cup graham cracker crumbs
1/4 cup sugar
***Filling***
3 packages (8 ounce size) cream cheese, softened
1 can (14 ounce size) sweetened condensed milk
1 cup semi-sweet chocolate chips, melted
3/4 cup chocolate malt powder
4 eggs
1 teaspoon vanilla


Directions:

Combine crust ingredients. Pat firmly in bottom and 1/2 inch up the side of a 9 inch springform pan; chill.

To make filling, beat cheese until fluffy; add remaining ingredients and blend thoroughly. Pour into prepared crust.

Bake at 300 degrees F for 65 minutes or until filling shakes only slightly near center when moved. Cool; chill thoroughly. Garnish with confectioners' sugar and chocolate curls, if desired.

1 (8-ounce) brick cream cheese, room temperature
1 stick butter, at room temperature
1 egg
1 teaspoon vanilla extract
1 (18-ounce) box moist chocolate cake mix
Confectioners' sugar, for dusting

Preheat oven to 350 degrees F.
In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner's sugar. Place on an ungreased cookie sheet, 2 inches apart. Bake 12 minutes. The cookies will remain soft and "gooey." Cool completely and sprinkle with more confectioners' sugar, if desired.

This recipe is for Chocolate Cake lovers only. I've been using this recipe since 1980. In fact when I was manager of the dietary department in a local nursing home our residents loved it when it was chocolate cake night. It brought some joy into their lives.

Chocolate Cake

Place the following in a large bowl;

4 c. sugar
4 c. flour
4 tsp. cinnamon
1 tsp. salt

Place the following into a pan and bring to a boil;

½ lb. butter
1 c. oil
2 c. water
½ c. cocoa

Remove from heat and cool for 15 minutes. Then pour over flour mixture and blend well.

Blend the following until dissolved;

2 tsp. baking soda
1 c. buttermilk

Add to flour mixture and blend well.

Add the following to flour mixture;

4 eggs, slightly beaten
2 tsp. vanilla
1 c. nuts, chopped

Blend mixture well and pour into a greased 9” x 12”baking pan.

Chocolate Glaze

½ lb. butter
½ c. cocoa
¾ c. milk
2 lb. powdered sugar
1 tsp. vanilla

Bring butter, cocoa and milk to a near boil, add powdered sugar and mix well. Remove from heat and cool 5 minutes. Add vanilla and mix well. Pour over chocolate cake while mixture is still warm.

Double Chocolate Biscotti

INGREDIENTS:
1/2 cup butter, softened
2/3 cup white sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
2 eggs
1 3/4 cups all-purpose flour
4 (1 ounce) squares white chocolate, chopped
3/4 cup semisweet chocolate chips

DIRECTIONS:
In a large mixing bowl, cream butter and sugar with an electric mixer until light and fluffy. Gradually beat in cocoa and baking powder. Beat for 2 minutes. Beat in the eggs one at a time. Stir in flour by hand. Mix in white chocolate and chocolate chips. Cover dough, and chill for about 10 minutes.
Preheat oven to 375 degrees F (190 degrees C). Divide dough into two parts, and roll each part into a 9 inch long log. Place logs on lightly greased cookie sheet, about 4 inches apart. Flatten slightly.
Bake for 20 to 25 minutes, or until toothpick inserted in center comes out clean. Cool on cookie sheet for 5 minutes, then carefully transfer to a wire rack to cool for one hour.
Cut each loaf into 1/2 inch wide diagonal slices. Place slices on an ungreased cookie sheet, and bake at 325 degrees F ( 165 degrees C) for 9 minutes. Turn cookies over, and bake for 7 to 9 minutes. Cool completely, then store in an airtight container.

YES: Chocolate Brittle.

Crush Breton crackers and mix this with Brown sugar.
Spread onto a cookie sheet, Sprinkle melted butter on top and melt chocolate chips all over by baking it. Then, cool in fridge ir freezer, it's delicious!

If you like mint, you can melt Andes chocolate mints or chips and pour over Ritz crackers, cover both sides. Everyone loves them and says they taste like girl scout cookies. Very easy and good.

Chocolate Chip Cookies
1 cup butter, softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semisweet chocolate chips
1/2 cup chopped walnuts (optional)

Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire

4 (1 ounce) squares white chocolate
3 (8 ounce) packages cream cheese

1 1/2 cups heavy whipping cream

2 cups finely chopped white chocolate
2 fluid ounces brandy

DIRECTIONS:
Preheat oven to 300 degrees F (150 degrees C). Wrap the outside of a 10 inch springform pan with foil. Grease the inside of the pan.
Place the cream cheese, sugar, and flour in a mixing bowl and cream until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Scrape bowl.
Melt 4 ounces of the white chocolate. With an electric mixer on low speed, mix melted white chocolate into cream cheese mixture. Keeping electric mixer on low, slowly beat in the vanilla and 1/2 cup of heavy cream. Blend well. Pour mixture into the prepared springform pan.
Place cheesecake pan in a water bath filled with warm water. Bake at 300 degrees F (150 degrees C) for 50 to 60 minutes, or until center of the cheesecake is just firm. Cool at room temperature for 1 hour. Refrigerate until set before removing from pan.
To make White Chocolate Brandy Sauce: Place 1 cup heavy cream in a saucepan and bring to a boil. Watch carefully so it doesn't boil over. Pour hot cream over 2 cups of finely chopped white chocolate and stir with a wooden spoon until melted. Add brandy and continue stirring until incorporated. Pour over chilled cheesecake and serve.
