This is the best way to do box mac. Drain the cooked macaroni, set it aside. Heat the butter & milk in the pan until almost boiling - add the sauce mix & whisk until smooth. Add the mac. My sister taught me this little trick & it's pretty good for when you don't have time to make it the old fashioned way. Now, for the good stuff:

Pastitso

1 lb long macaroni
4 T butter
3/4 c parmesan (freshly grated)
1/4 t nutmeg
salt & pepper
3 eggs, lightly beaten

Meat Sauce:

1 lg onion, chopped
1 clove garlic, crushed
2 T butter
1-1/2 lb ground beef
1/4 c tomato paste
1/2 c dry red or white wine
1/2 c stock
2 T chopped parsley
1/2 t sugar
salt & pepper

Cream sauce

1/3 c butter
1/2 c flour
3 c milk
1/4 t nutmeg
salt & pepper
1 egg, lightly beaten

1. Cook macaroni in boiling, salted water until just tender. Drain & return to pan.
2. Melt butter until golden brown & pour over macaroni. Add 1/2 c of the cheese, the nutmeg, salt & pepper to taste & toss well. Leave until cool, add eggs & toss again. Keep aside.
3. Make meat sauce. Gently fry onion & garlic in butter until onion is soft, increase heat & add ground beef. Stir well & cook until meat begins to brown.
4. Add remaining meat sauce ingredients, cover & simmer over gentle heat for 20 minutes.
5. Make cream sauce. Melt butter in a saucepan, stir in flour & cook gently for 2 minutes. Add milk all at once & bring to the boil, stirring constantly. Boil gently for 1 minute.
6. Add nutmeg, salt & pepper to taste & cool a little before stirring in beaten egg.
7. Add 1/2 c of this sauce to the cooked meat sauce.
8. To assemble Pastitso, butter a 13x9x3 inch oven dish. Sppon half of the prepared macaroni evenly in the base & top w/the meat sauce. Cover w/remaining macaroni, levelling top.
9. Pour on cream sauce and spread to completely cover macaroni. Sprinkle remaining cheese on top & cook at 350 for fifty minutes until golden brown.
10. Let it stand for 10 minutes before cutting into squares to serve.

I know this one sounds super-fattening and all, but it's not like you're going to eat it all the time. It's from the Tony Danza show when Mo'nique was a guest.

MO'NIQUE'S MAC AND CHEESE
Ingredients:
3 eggs
1/2 cup milk
2 lbs.Macaroni
1/2 Stick of Land O’Lakes Butter
1 jar of Kraft Old English Cheese
1 jar of Cheese Whiz
2 blocks of Shredded Extra Sharp Cheese

Preparation:
Preheat oven to 350 degrees
Boil macaroni until tender and then set aside
In a glass baking dish, layer macaroni, then add butter, Old English cheese, Cheese Whiz and Shredded Cheddar evenly across dish
Beat three eggs and 1/2 cup of milk and then spread over
Continue layering to the top of the baking dish with macaroni and cheese
Bake until the top is golden brown
Enjoy!

4 cups elbow macaroni, cooked and drained
2 cups grated cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter, cut into pieces
1/2 teaspoon salt
1 cup milk

6-8 servings 1 hour 5 minutes 10 mins prep


Preheat oven to 350 degrees F.
Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar.
In a separate bowl, combine the remaining ingredients and add to the macaroni mixture.
Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes.
Top with additional cheese if desired, and bake a few minutes more until cheese is melted.

Macaroni and Cheese

Ingredients

(4 servings)

1/2 lb Macaroni
1 c White sauce
1 ts Prepared mustard
1 pn Cayenne pepper
1/2 lb Sharp cheddar ch.shredded
1 Salt to taste
1 Fresh ground pepper to taste
2 oz Munster cheese,thin sliced
1/4 c Fresh ground parmesan ch.
2 tb Breadcrumbs
1 tb Butter,cut in small pieces


Instructions

Cook the macaroni in plenty of salted water until tender,8 to 10 minutes.Drain and cool under cold running water.Prepare the White Sauce,and while still hot,toss all but two tables. of it with the macaroni,mustard,cayenne,Cheddar,salt and pepper.Turn into a large buttered casserole and top with the munster cheese.P Bake in a preheated 375 deg.oven for 15 minutes,or until the top is crusty and brown.Spread the remaining 2 tables. White Sauce over the top.Cover with a layer of parmesan cheese mixed with the breadcrumbs.Dab with the butter.Return to the oven for 10 more minutes.Place under high broiler for 1 minute to brown the top and serve immediately.Makes 4 servings....

This is a tried and true recipe. My favorite and I do believe the recipe came from First Lady Nancy Reagan

Macaroni and Cheese

½ lb. macaroni
1 tbl. butter
1 egg, beaten
1 tsp. dry mustard
1 tsp. salt
3 c. sharp cheese, grated
1 c. milk

Boil macaroni in water until tender; drain thoroughly. Stir in butter and egg. Mix mustard and salt with 1 tbl. hot water. Add to macaroni. Add cheese, reserving some for topping. Pour into a buttered casserole; add milk. Top with reserved cheese. Bake 350° for 45 minutes or until custard is set and top is crusty.

I put a can of tuna per box it make a nice change and it's cheap. my sister adds peas as well but I don't like peas.
