I used to have an easy recipe for bread pudding but have lost it over the years. It was made from stale bread, eggs and a few other things but was real easy to made and was all natural. Now i'm a single dad and want to make it for my daughter who also has a lot of food allergies and i can't find it. PLEASE HELP !

A lot of you have sent great ideas but i need a real simple recipe with as few ingredeints as possable. The one i had and lost was mainly .....eggs, milk, stale bread and just a few other things. does anyone have a old grandmothers secret one ? the one i had was from the 1940s but the original grandmother is now dead and so is the secret. Thanks again for your help !

#1 Recipe Bread Pudding
2 slightly-beaten eggs
2 1/4 cup milk
1 tsp vanilla
1/2 tsp cinnamon
1/4 tsp salt
2 cup bread cubes
1/2 cup brown sugar
1/2 cup raisins or chopped dates
Combine all ingredients. Pour into greased baking dish. Sprinkle additional brown sugar and cinnamon on top. Dot with butter.
Bake in a 350 degree oven until pudding is set but not dry.
Serve recipe bread pudding warm or cold.
#2 Recipe Bread Pudding with Whiskey Sauce
3 eggs
1 1/4 cup sugar
1 1/2 tsp nutmeg. Tip: Professional chefs recommend using fresh spices rather than dried. You'll need a good spice grater, such as the Microplane Spice Grater
1 1/2 tsp vanilla extract
1 1/2 tsp ground cinnamon
1/4 c unsalted butter
2 1/4 cup milk
1/2 cup raisins
1/2 cup chopped pecans
5 cup stale french bread cubed
1 apple, chopped
2 eggs
2 cup icing sugar
1/2 lb unsalted butter
1/4 cup whisky
Beat eggs until frothy. Add sugar, nutmeg, vanilla and cinnamon, and beat until well blended.
In a saucepan, heat the butter and milk until the butter is just melted. Mix together raisins, pecans and bread cubes. Combine the milk and egg mixtures, pour this over the bread and soak for 45 minutes.
Preheat oven to 350 degrees F. Lightly grease individual ramekins or a large loaf pan. Add the apple to the bread pudding, and spoon mixture into the baking container. Place in oven and reduce heat to 300 degrees F. Bake for 40 minutes then increase heat to 425 degree and bake for 15 minutes, or until browned.
Sauce for Recipe Bread Pudding
Combine 2 eggs and icing sugar. Melt butter in a double boiler then whisk in egg mixture. Stir constantly until sugar has melted and sauce has thickened slightly. Allow to cool, and add bourbon. Serve over recipe bread pudding.

I don't know what kind of recipe you have for bread pudding that's "moderately involved" (I love that description... LOL) but it really couldn't be a simpler thing to make than bread pudding. Chunk the bread into pieces (approx 1") Place it in a buttered baking dish (preferably glass or ceramic); Mix together: 2 c milk or half-and-half (or some of each) 4 eggs 1 c sugar 1 tsp cinnamon Pour that over the bread, let it soak for at least 30 minutes, then bake it at 350 for about 40 - 45 minutes. If you like a more custardy consistency, you can use a water bath when you bake it. I do that all the time and it takes a few more minutes to cook. Bon Appetit!

Coconut Bread Pudding
2 tablespoons butter
1/3 cup confectioners' sugar
1 cup white sugar
4 eggs
1 egg yolk
2 (14 ounce) cans coconut milk
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 tablespoons coconut extract
1 1/2 cups flaked coconut, divided
1/2 cup fresh coconut
1 (1 pound) loaf French bread, cut into 1 inch cubes

DIRECTIONS:
Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish with butter, and dust with confectioners' sugar.
In a large bowl, combine sugar, eggs, egg yolk, coconut milk, cinnamon, nutmeg, salt and coconut extract. Mix until smooth. Stir in 1 cup of flaked coconut, and 1/2 cup fresh coconut. Fold in bread cubes until evenly coated. Pour into prepared baking dish. Set aside for 30 minutes.
Bake on a cookie sheet in preheated oven for 25 minutes. Sprinkle top with remaining 1/2 cup flaked coconut. Continue baking for 25 to 30 minutes, or until center springs back when lightly tapped.

This recipe is very easy..but I am not sure what your daughter is allergic to...but once you eat this you won't lose the recipe!!

White Chocolate Bread Pudding with White Chocolate Kahlua Sauce
Ingredients:
6 cups day old French bread, cubed
4 cups heavy cream
1 cup milk
1/2 cup sugar
8 oz. white chocolate
2 whole eggs
5 egg yolks
Preparation:
1. Preheat oven to 350 degrees. Place cubed French bread in large casserole dish and toast bread in oven for 15 minutes. Remove from oven.
2. Place heavy cream, milk and sugar in a medium sauce pan and heat just until the boiling point. Remove from stove, add white chocolate and stir until chocolate has melted.
3. Whip together whole eggs and egg yolks. Add to cream mixture and whip until incorporated. Pour mixture over toasted French bread and allow to soak for 20 minutes. Place in oven and bake 35 minutes covered. Uncover and bake for an additional 15 minutes.
4. Top each serving with Kahlua Sauce. (Recipe Below)
Kahlua Sauce
1 cup heavy cream
4 oz. white chocolate
1/4 cup Kahlua
1. Bring heavy cream and Kahlua to a simmer in a small saucepot for 3-5 minutes.
2. Remove from stove and add chocolate and allow to sit until the chocolate is melted. Stir until smooth.
Yields 12 –15 servings.
Honey Bread Pudding
Serving Size: 8
Ingredients:
8 cups egg bread -- cubed
1 cup raisins
3 cups 2% low-fat milk
1 cup evaporated low-fat milk
6 eggs -- beaten
1/2 cup honey
1 tablespoon grated orange peel
1 teaspoon vanilla
1 teaspoon ground cinnamon
Arrange bread and raisins in bottom of lightly greased shallow 2 quart baking dish. Beat remaining ingredients in a large bowl until well blended.
Pour over bread cubes in baking dish and let stand for 1 hour, or until liquid is absorbed. Bake at 375ºF for 45 to 50 minutes, or until knife inserted near center comes out clean.
Caramel Apple Bread Pudding
Streusel Topping:
3/4 c. flour
1/2 c. packed brown sugar
1/3 c. butter, softened
1/2 c. chopped pecans
1/2 tsp. cinnamon
Pudding:
1 3/4 c. milk
1 c. butterscotch, caramel or fudge ice cream topping
1/4 c. butter
4 c. cubed bread
2 c. peeled thinly sliced apple
2 eggs, lightly beaten
Preheat oven to 350F. Lightly grease a 1 1/2 qt. baking dish. Mix streusel ingredients together and set aside.
In large saucepan, combine milk, ice cream topping and butter. Cook over medium heat, until blended and butter melts. Remove from heat. Stir in apples and bread; let stand 10 minutes. Stir in eggs. Pour into baking dish and bake 20 min.
Remove from oven and sprinkle with streusel. Bake another 20-25 minutes or until apples are tender and tester inserted in center comes out clean. Serve warm with additional caramel topping if desired.
Cherry French Bread Pudding
2 cups low fat milk
2 tablespoons butter or margarine
3 eggs
1/3 cup sugar
1 teaspoon cornstarch
1 1/2 teaspoon vanilla
1/4 teaspoon salt
4 cups day-old French bread, cut in 3/4" cubes
3 cups fresh, sweet cherries, pitted
Cinnamon Sugar (recipe follows)
1cup low fat vanilla yogurt (optional)
Heat milk and butter but do not boil; remove from heat and set aside. Beat eggs, sugar, cornstarch, vanilla, and salt together. Gradually stir milk into egg mixture; pour over bread cubes and let stand 30 minutes.
Spread cherries over the bottom of buttered 9"square pan. Pour bread mixture over
cherries. Sprinkle with Cinnamon Sugar. Bake at 350F., for 30 to 40 minutes or until tester inserted near center comes out clean. Cool slightly.
Serve with yogurt, if desired. Makes eight servings.
Cinnamon Sugar: Mix 2 teaspoons sugar with a generous dash of ground cinnamon. Makes 2 teaspoons.
