The Oriental in Bangkok is amazing www.mandarinoriental.com. In Chiang Mai check out the Mandarin Oriental Dhara Dhevi www.mandarinoriental.com or the Four Seasons Chiang Mai www.fourseasons.com. I would imagine that would depend on certain things:
1-When would you like to go?
2-For how long?
3-City of departure?

Head for the Four Seasons Spa and Resort in Chiang Mai to get nice couple pampering. You both can practically be served within the hotel grounds and you need not step out until your departure. Plus you get a very nice rustic scenery around you. I would recommend this.

Le Royal Meridien Phuket Yacht Club hotel in Phuket is by far the most romantic 5 star in the area. The rooms are well appointed and each has an outdoor living area w/chaise lounges, sofas, etc....completely private w/stunning views. Quiet harbor area, close to scenic areas to catch the sunset, nightlife in Phuket is a 20 minute taxi (tuk tuk) ride away, restaurants in hotel are wonderful (as are the more casual ones down the hill in the little "town"...walking distance). The Oriental in Chiang Mai . . . incredible villas set in the middle of a working rice field surrounded by Thai Temples . . simply unforgettable!!!!!!!!!!!!!!!!!
