Powdered sugar, milk and a little butter, just mix these ingredients till you have the consistancy you want.

My favorite is the classic buttercream from Wilton. Now, they have one recipe floating around out there that is NOT the same as this one. This is my favorite to use when decorating cakes, and always gets rave reviews.

1 cup solid white vegetable shortening (like Crisco)
1 teaspoon clear flavoring (vanilla, almond, or butter) - I use a combination of vanilla and butter
2 tablespoons water
1 pound pure cane confectioner's sugar (10x)
1 tablespoon Wilton meringue powder
A pinch of salt (this cuts the super-sweet taste and makes it perfect!)

Cream shortening, flavorings and water. Add dry ingredients and mix on medium speed until all ingredients have been thoroughly mixed together. Blend an additional minute or so, until creamy. Yields 3 cups of icing.

This creates a stiff icing, ideal for cake decorating (flowers, borders, et cetera). Add 3 teaspoons of water to the above batch for a medium consistency. Add 3 more teaspoons of water (6 total) for a thinner consistency. The thin consistency is great for icing cakes.

Remember, when making icing with milk, eggs or butter, it'll be an icing that needs refrigeration. The recipe above does not need refrigeration -- just store in an air-tight container and it'll stay good for weeks.
