As hundreds would likely guard each pyramid exterior that would contain a cap like this, how would one go about stealing it. id say they would have to melt the cap down, however they melted metals and gold in those days, after sending an army of thousands in there and killing all of egypts forces. and as you know those egyptians multiplied like rabbits so... uh... yah, there were a lot of them that had to go down before this would even be a feasible plan.

The top of the pyramid was probably not solid gold. Gold can be pounded paper thin, it is called "gold leaf".

As far as guards, anything can be stolen if the incentive is enough. Bribe a few guards to look the other way, scamper up to the top of the pyramid, scrape off some gold, then haul down the pryamid to find other guards waiting for you.

Oh well.

I assume you refer to the Great Pyramid in your question, which was already 1500 years old by 1000 BC, having been constructed around 2650 BC.
In any case, the pyramidion (capstone) would not have been solid gold, though it may have been plated in gold or electrum. It would have been quite easy to steal, as the cults involved with the various pyramid complexes eventually lost support and disintegrated, leaving the pyramids unguarded. Egypt also experienced several periods of fragmentation of the central government in ancient times (usually referred to as the "Intermediate Periods") during which time it would have been relatively easy to steal valuables from open sites.
There is clear evidence that the lack of central control and administration contributed to tomb robberies at various sites throughout Egypt in various time periods. In addition, human nature has certain consistencies - guards can be bribed. It's also not entirely beyond the realm of possibility that some Egyptian kings either actively or passively approved of robbery of sites that were already ancient to them in times of economic crisis.

o how i wish i had some pils to take dr faggsteain. the egyptians also had no shortage on gold. you see how thick their caskets were made of gold? and you're tellin' me it was paper thin gold leaf. HA! good try though. egyptians were proud of what they had, or what their ancestors had made. we act tired after a long days work, but back in their days it was 24/7 workin or Fu&**n. well i guess its still the same today. except we dont physically or mentally do as much meaningful work nowadays..... It was most llikely the egyptian women twisting the mids of their sons telling them mommy needs a new golden necklace or something like that. leave it to women to ruin everything and give us everything at the same time.
