You may find this hard to believe but as a cook in the Air force stationed at Big Springs Air Force Base, Texas, in the early 1950's we used eggs that were frozen in the 1940's. Dates were printed on the outside of the egg cases. Very few were found to be bad and we discarded those of course. Beat the hell out of the powdered eggs we had to recombine and serve to the guys in Korea.

P.S. The date that is stamped on the egg cartons today is the sell date not the to be used by date. Kept under ideal conditions in the fridge they are good for weeks. When an egg is bad you can tell (believe me you can tell) by the rauncy odor they omit when they are cracked. If you know your eggs are more then two weeks old I suggest you crack them in a small bowl to check and see if they are still good to use.

They usuallywill keep past the expiration date if they have been stored properly in the refrigerator. The expiration date is always printed on the carton.

Bad eggs float in water. I prefer to remove mine every morning from beneath a chicken and cook them immediately as nature intended in fresh creamy butter. I do find eggs that are getting older are better for making pastries and cakes, especially angel food.
