Please give me your best "healthy" recipe that not only tastes good but looks good.

If you're into funky salads follow this:
- Mixed lettuce (preferrably light-colored ones)
- Tangerine pieces
- Sliced fresh strawberries
- Chicken (or any poultry you like) chunks (preferrably in small squares)
- Ginger/Lemon/Soy salad dressing
- Mango dressing (for salads, obviously)

Toss the lettuces in a salad bowl, throw a few chicken pieces in it; mix it up. Place the tangerine pieces in the center of it pretending to make a flower out of it. Fill the center of the flower with strawberry slices. Using a spoon draw crossing lines over the whole salad of both dressings. Easy, fast, healthy and great looking!!

If you like eggplant, you'll love this.

Cook an eggplant and peel it. Then cut it into bite size pieces.

Next, take a casserole tray, coat the bottom with crushed tomatoes, then add eggplant pieces, and some motz. cheese (low fat), continue layering till you are done and cover the top in cheese.

Cook in the oven till cheese melts and enjoy. It is yummy!

Add other vegetables if you choose. Zucchini works well with it also.

meanwhile throw some broccoli in some hot water and steam for just a few minutes, drain and season to taste

while everything else is cooking - cook some whole grain rice.
