Cornish hens cook over an open fire on a stick, potatoes,green peppers, onions and which ever sauce you like smothered over all can be done on a stick over an open fire. Itallian sausage and hot dogs work well on a stick. If you want h-burg, try pre made meatballs. Thaw them and cook them over open fire on stick. Use to do lots of camping..love cooking over an open fire.

Is there a reson you are not brining pots and pans? Do you realize you can't even have coffee? I have camped ALOT and would suggest 1 of each....but if you insist
Of course theres always hot dogs on a stick with chips as 1 meal.
white fish and what ever veggies you like, spice with soy sauce salt and pepper,wrapped in foil put it in the coals. YOu can do all this before you leave home and freeze it. Just make sure you keep it on ice. I have never tried this but maybe hamburgers or sauage patties could be preshaped, wrapped in foil and cooked that way...
Bring sandwich meat and cheese, pepperoni, crackers, nuts, granola bars.

Well, with foil and sticks I imagine you're going to have a fire. If you can add one simple pot over the fire to boil water, you can make omelets.
Before leaving your house for the camping trip, place two eggs in a Ziploc freezer bag. If you want anything else in your omelet like ham, sausage, cheese, et cetera, bring it in your cooler with the bagged eggs. When you're ready for a meal at the campsite, boil some water then add the ziploc'ed eggs with whatever extras you want, and boil the the entire bag for exactly 13 minutes. When they're through, you'll have a great campsite omelet that will slide perfectly out of the bag with no mess! If remove the pot from the heat after 13 minutes, but allow the bags to remain for a few minutes longer, you'll even be able to pick up the omelet with your hands -- no forks necessary...and the eggs will still be fluffy and tender.

Cooked meat and eggs will last less than a day without refrigeration. Maybe freezing meat it ahead of time would help. By the time it thaws, you're ready to cook it (except chicken, I wouldn't do anything with that unless you have a fridge).
What about jerky? That keeps forever. So does hard, smoked meats, like hard salami or pepperoni. Also, the packaged soup, noodle, or rice mixes in the supermarket are good for camping--especially the ones that just need hot water added to them. Some need milk, but you can add powdered milk. It helps to have that too, for cereals and granola.

This is a friends recipe who just loves camping. Just cook the veggies as instructed below before you leave for camp. this will not need to be kept cold and will keep for about 2 days after cooked before it becomes mushy
potatoes, still in skin
carrots
soy sauce
salt and pepper
Cut potatoes into small cubes put in bowl with chopped carrots.
Boil in microwave or stove until soft usually 15 to 20 minutes.
Drain water and then place carrots and potatoes in aluminum foil shape foil like a bowl so juices won't leak out.
Cover potatoes and carrots with a hefty.
Sprinkle of soy sauce and however much salt and pepper you want.
Wrap up tightly in foil and put in oven 400 for 30 to 35 minutes or while out camping just cook it under some nice hot coals.

I'm sure you'll have a cooler but an idea for brekkie is whip up some eggs (just scramble them with a fork)..put them inside a zip lock baggie and add what you'd like to them..i.e. crumbled up cooked bacon, small bits of cheese, bits of cooked sausage meat..etc. Take the baggie and put it into a pot of hot boiling water... let the eggs cook inside the zip lock baggie. Also, you don't really want anything with MAYO in it... not a good idea for camping without good refridgeration.
You could do the same procedure with hot dogs...put them in a zip lock bag and when you want them cooked..just throw them in a pot of hot water.

Potatoes dude. Hotdogs. Pre-cook some bratwurst. Kielbasa. Wrap whole fish like trout in foil and place on coals. Look at Coleman's line of 5 and 6 day coolers. If you open it only as much as absolutely necessary it will keep ice froze for 5 or 6 days respectively. Keep you meats and eggs in that one and keep soda and beer in another cooler, that way you won't open the food one much. Your stuff will be good for days. www.coleman.com

You can cook hot dogs and brats on sticks. You can also cook vegetables over a fire if you wrap them in foil. Also try making shishkabobs by putting meats and vegetables and fruits on sticks. For dessert, try pound cake with brown sugar and butter wrapped in foil and cooked over the fire.
You can keep meat and vegetables in a cooler for a couple days as long as you keep ice in it to keep them cold. Butter or cheese would be ok in a cooler too.

a friend of mine wraps his hot dogs or sausages in croissant wraps (like the canned biscuits) and slowing roasts them over the fire.
be careful with leaving meat or eggs w/o refrigeration - it doesn't take long to spoil - freezing the meat beforehand might give a little extra time. otherwise freeze dried foods, canned foods or tuna, salmon in a pouch. a good dessert is to cut the inside out of an apple drop in red hots, wrap in foil and place in the coals.

Not exactly a meal, but there's always smores for dessert or treat. Freeze chocolate bars before you leave.
Hot dogs, pre-cook brats and sausages warm easily over a fire.
Try checking with a sporting goods store for freeze dried food that you just add water to.
