MAGDALINAS VALENTINE CHICKEN
4 boneless skinless chicken breast
2 cans Campbell's condensed golden cream of mushroom soup
1/4 chopped yellow onion
milk (1) one soup can's amount
flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.
Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.
Drain and remove excess grease from skillet.
Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.
Simmer on medium heat till onions are soft.

LONDON BROIL
Servings: 8 (5 1/2 oz. each)
4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard
MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade
COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.
Drain marinade from meat. Reserve marinade up to two weeks if needed.
Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.
Transfer the steak to a cutting board and let rest for 5 minutes.
Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

a really easy yet impressive dish that will make everyone think you're amazing is slow cooked lamb in red and white wine. you get a big piece of lamb (leg or shoulder) brown it in a pan for 5 minutes on a hot heat, put it in the oven for 15 mins on the highest heat, turn the oven right down to 150 degress C. fry some carrots, onions, (cut quite big) garlic, then put the meat, vegetables and a mixture of red wine, white wine and beef stock in a deep oven proof pot. the liquid should be half wine half stock and should almost cover the meat. cook it slowly for 2 hrs, turning the meat every 1/2 hour. take the meat out, skim of the fat from the liquid and then put the meat back in the liquid and serve with mashed potatoes. its really really good.

Ingredients :
500 gms. fish cut into cubes
1/2 cup yogurt whipped
2 tbsp lemon juice
1 tsp white cumin seeds
2 onions chopped
1 tsp aniseed
6-8 red chillies
2 tsp coriander seeds
1 tsp onion seeds
1/4 tsp fenugreek seeds
1/2 tsp turmeric powder
1/2 tsp mustard seeds
1 tsp red chilly powder
5-6 green chillies finely chopped
1 tbsp garlic paste
1/2 cup oil
Method:
1-Wash the fish well in salt water. Apply the lemon juice to the fish and set aside for approximately 1 hour.
2-Fry the onions till they are light golden in color. Remove with a slotted spoon and crush. In the same oil put the red chillies, onion seeds, turmeric powder, red chilly powder and garlic. Stir and fry for a few minutes till the oil separates.
3-Add the yogurt and again stir and cook till the oil separates. Add the fish. Coarsely grind together the white cumin seeds, aniseed, coriander seeds, fenugreek seeds and mustard seeds.
4-Add this to the fish along with the green chillies and cook over a low heat till the fish is done, about 10 min.

spicy chickpeas, you need a tin of chickpeas, a tin of chopped tomatoes, garlic, salt, turmeric and coriander and cumin powder, one onion. Fry the onion, add the garlic, as much as you like!! stir in the powders, add tomatoes then add drained chickpeas, give a good stir and cook for 15 mins on simmer. May add water if you like a bit more sauce, salt to taste and if you really want to add a bit of red chilli powder. It's easy to make and delicious, can freeze also.

Depends what you have in the store cupboard. I think I would do a BBq with a lovely salad corn on the cobs, potato salad, coleslaw and a lovely piece of crusty bread.

Depends on your abilities and what you have in the cupboard, plan your menu at least a week in advance and then buy accordingly. You would also want some emergency type of foods that can be substitutes just in case of unusual circumstances, guests etc.

I like to get one of those preseasoned peppercorn roasts and cook it on the grill then dice it up and add it to a salad.
Makes for a great anytime meal.
