Put sugar in the salt shaker. Unscrew the cap on the salt shaker. Put fresh gum under the napkin and flatten and return the fork and knife on top as if the table was freshly set. Put fresh gum under the water glass and press down hard. Bring a fly for the water or drink, (harmless but shocking).
super glue the fork to the napkin setting.
If the victim leaves the table, put salt in the water glass and stir well.
Here is the best prank I know. Unfold a paper napkin. Tell the guy across the table to watch carefully as you lay the napkin over your face. Lean slowly toward him secretly taking in a giant breath. Then blow really hard. The napkin will fly across the table and startle the hell out of him.
Practice first a bunch at home with paper napkins. Variations: Make eye holes to distract him.

My suggestion is to consider NOT pulling a prank at a restaurant unless you want to get kicked out. As funny as some of the mentioned pranks may sound you could get in a lot of trouble, cause harm to someone else, or just plain get arrested.
There are better ways to have fun.

Why do people think it is funny to put sugar in salt shakers? Or salt insomeone's drinking water? If the victim of your prank happens to be diabetic or has a diet where they must avoid salt, you could be causing a serious health problem. I really don't think a restaurant is the place for pranks.

craigslist.com tells you where to get a job at a restaurant. Then you can have your friends come in to visit you and pull a prank on everyone that is not you.
Then you can get fired and feel like the idiot that you are!

Not that I know of but you can always revive the "Jackass" prank where Johnny Knoxville hid a dog turd in a newspaper and snuck it into his Chinese food. He then called out to the waitress/waitor and complained about the dish he'd recieved. Very funny, and very mean.
