Mexican Train Wreck -- all the good stuff you put on tacos or tostados or in burritos, except you just mound it on a plate. You can do individual plates, prepare a platter or set it all out on a buffet or lazy susan so everyone can build their own the way they like.
Train Wreck
On a base of fresh or bagged corn tortilla chips:
Pile on:
shredded lettuce
seasoned beef
and/or beans/refries
grated cheese(s)
diced tomatoes, onions, olives, cukes -- whatever you like
sliced jalapenos
salsa
guacamole or sliced avocado
sour cream
Basically, anything you like, and the more the merrier.
About 1/3 of the way through , you'll see why it's called a Mexican Train Wreck! One great big messy pile-up!!!

I <3 taco salad. I just get corn chips and throw some canned refried beans on there, some bagged salad, cheese, olives, salsa, and sour cream. If I wanna get fancy, I fry up some hamburger meat with taco seasoning and toss it in there.
Now I want that for dinner.
Sometimes my girlfriend makes me trailer park enchiladas. I have no idea exactly how she makes em, but she uses Kraft cheese slices instead of "real" cheese, lol. Suprisingly, they're good.

Load the exact same ingredients that you would put in a taco onto a platter of tortilla chips. Tastes just like a taco without the bother of assembling them.

My family loves this dish and I love that it's easy to throw together. I serve it with a side salad for a complete meal. It's a great alternative to traditional tacos.
1 lb ground beef
1 cup salsa
1/2 cup mayonnaise
2 teaspoons chili powder
2 cups crushed tortilla chips
2 cups shredded colby-monterey jack cheese
chopped tomatoes
shredded lettuce
sour cream
Brown ground beef and drain grease.
Add salsa, mayonnaise and chili powder; mix well.
In an ungreased 2 qt baking dish, layer 1/2 of meat, chips and cheese.
Repeat layers.
Bake uncovered at 350 degrees for 20-25 minutes or until heated through.
Top with tomato, lettuce and sour cream.
Can substitute 1 envelope taco seasoning for chili powder; adjust salsa and mayo to desired consistency.

Yummy! I would do a Taco Salad since it is summer and makes for a lite yet satisfying meal. In a bowl combine lettuce of your choice, tomato,colored peppers, prepared taco flavored burger or chicken, peices of avocado, grated cheese, and broken up nacho chips or corn chips (like you would use croutons). For the dressing mix salsa and sour cream together and there you go!

Nachos, fry up your meat as if your making tacos and the get some Velveeta cheese, melt it with a little milk and salsa, the chop up some lettuce and tomato, onion, and get some shredded cheese then assemble tortia chips then cheese sauce then the meat lettuce tomato and shredded cheese warm in microwave for 1 min then dab on sour cream. ad jalapeno peppers if you like then or banana peppers.

My Husband doesnt like the taco shells so what i do is i put the meat on some sour dough Buns from Puplix or some rye bread and then put whatever else you want on it... it's wonderful!! Try it out....

steak tacos... corn tortillas with steak strips cilantro squeeze on some lime and hot salsa. the real tacos. or of course enchiladas are great.
