Beans are are a good choice or tofu, I like to batter my tofu like chicken and fry it in penut oil(good for you) and add it to my dishes, red sauce like pasta or top on top of salads..Yum!!

Apple Crumble
Cooking Time : 12 min.
Serves 4.
Ingredients
1 teacup plain flour
a pinch salt
6 tablespoons butter
100 grams granulated or brown sugar
700 grams cooking apples, peeled and sliced
2 to 3 pinches ground cinnamon
Method
1.Sieve the flour and salt together into a mixing bowl and rub in the butter until the mixture resembles fine bread crumbs.
2.Add 40 grams of sugar and mix well.
3.Spread the apple slices evenly in a shallow dish, add 50 grams of sugar and ground cinnamon.
4.Cover and microwave on HIGH for 3 to 4 minutes.
5.Top with the crumbled flour mixture, press very well, and sprinkle with the remaining sugar and a pinch of ground cinnamon. Microwave on HIGH for 6 to 8 minutes or until just set.

1.Serve immediately.

Chocolate Silk Pie
1 bag semi sweet good quality chocolate chips
1 container silken tofu
1 T. honey
1/2 C. coffee flavored liquer
1 pre-made graham or chocolate crumb pie crust
Carefully melt the chocolate chips in the microwave. Stir to make chocolate smooth. In a blender or food processor, put in all ingredients (except pie crust) and blend until smooth. Add chocolate and blend some more. Pour chocolate mixture into crust and refrigerate for at least 4 hours.
