♡Well, in Japan so sushi is a little different here, but I know what you mean because when I go home to California I see lots of non raw fish sushi. There are plenty of cooked fish choices. Sushi filled with tempura (batter fried) shrimp

is delicious. Grilled salmon and cooked crab meat are other options. Vegetarians can choose the Vegetable Combos or Tofu Rolls.
Other American variations include the ever-popular California Roll,
http://www.takikomi.com/images/products/calif.JPG
which contains cooked imitation crab meat, avocado, shredded carrot and cucumber. Cream Cheese Rolls,

~we don't have anything like this in Japan, comes with either imitation crab or smoked salmon, plus a dollop of cream cheese.
How do those sound? If you were in Japan, you could try tamago (omelet) sushi:

or inari zushi, deep fried tofu pouches filled with seasoned rice and some veggies:

both delicious too! Hope this helps!♡

Sushi means "with rice" so basically that can be anything with glutinous rice, usually wrapped in seaweed or some other accent. Sashimi is raw fish, sometimes served on raw turnip leaves. There are a variety of non-raw-fish sushi's out there, but I'm hard pressed to name any of them. I'm sure you can google Japanese cuisine and find the references that you're looking for. Also, California Rolls are pretty much avacado, rice, and other vegetable-based ingredients, but some of those actually DO contain steamed crab or something like that.

There's no specific name for the sushi as sushi is usually just the name of the ingredient. So you could get tamago(egg) sushi, asparagus maki, oshinko (japanese pickle) maki, etc.

Here's a list of things that aren't raw fish and commonly found in sushi:

oshinko (pickles)
gobo (burdock)
avocado
asparagus
kanpyo (gourd)
shitake (mushroom)
ume (plum)
natto (fermented soybean)
tamago (egg)
shisonomi (pickled stem of the shiso plant)
horenso (spinach)
takuan (pickled radish)
nasu (eggplant)
kappa (actually a mythical creature, but used by Japanese to describe cucumber because it's the favorite food of the kappa)
ninjin (carrot)

There's also futomaki, which is usually a combination of a few of the above ingredients into a huge roll.

You might also be interested in trying the Korean dish kimbap. Very similar to sushi, like a futomaki but with a Korean flavor.

"Sushi" means RICE. Sashimi is raw fish.
California roll has avocado, cucumber, and cooked crab-meat or Krab (imitation crab made from Pollock. Many maki (or hand rolls) are just veggies. If there is rice on the outside or the green sushinori wrapper, ask if there is fish inside. Usually not.

The only one that I absolutely love is called "The California roll" A California roll contains rice, crab meat, avocado, and cucumber. Sushi does not mean raw fish. It’s a style of cooking that is more centered around rice than fish.

Here's a list of sushi, explaining the main ingredients (apart from the sushi rice of course!)
http://www.novospace.com/channels/sushi/list.htm

But this one's probably more useful to you, because it gives details of some sushi that's exclusive to America! ; )

You should be able to find something you want to try if you look on those two sites..!

they are specialty sushi rolls that have cooked seafood as their ingredients-- like baked, broiled or deep fried eel, tuna, white tuna, salmon with batter.

Specialty rollls are often called with fictitious names like dragon rolls, or spicy tuna rolls to name a few. On the menu there are many types of rolls that have cooked fish, seafood or sometimes processed meats to feature a wide variety of sushi rolls available in japanese restaurants.
