Moroccan Cheddar Couscous
1 Tbsp. olive oil
1 medium red bell pepper, diced
1/2 cup chopped onion
2 cloves garlic, minced
1 can (14-1/2 oz.) chicken broth
1 cup couscous, uncooked
1-1/2 cups (6 oz.) Sharp Cheddar Shredded Cheese, divided
2 Tbsp. chopped fresh cilantro
Heat oil in large skillet over medium heat until hot. Add bell pepper, onion and garlic. Cook 6 minutes or until vegetables are tender, stirring occasionally. Add broth; heat to a boil. Stir in couscous; cover and remove from heat. Let stand 5 minutes or until broth is absorbed. Fluff couscous mixture with a fork. Stir in 1 cup cheese. Sprinkle with remaining cheese and cilantro.
GREEK SALAD
Kosher salt and freshly ground black pepper
4 tomatoes, seeded and cut into chunks
1 medium red onion, sliced thin
1 medium cucumber, sliced thin
1/2 pound feta cheese, crumbled
1/2 cup kalamata olives, pitted
1 head romaine lettuce, torn into bite size pieces
1/3 cup Italian dressing
Salt and pepper the tomatoes, onion and cucumber. In large bowl, toss tomatoes, onion, cucumber, cheese, olives and lettuce with dressing and serve.
Butter Bean Salad
2 cans butter beans, rinsed and drained, 15 ounces each
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/2 red onion, chopped
2 cloves garlic, peeled and minced
1 teaspoon ground cumin, 1/3 palm full
2 tablespoons extra virgin olive oil
1 large lemon, juiced
Coarse salt and freshly ground black pepper
Combine all ingredients in a medium bowl. Toss to coat beans and vegetables evenly in dressing.

It's summer. It's hot everywhere. I would stay away from any items you wouldn't want to spoil on the table. That means no raw dairy like sour cream, cheeses, dips, and cream cheese. Also no Mayo.
That said, a pasta salad in a vinagar dressing works as a side or any cookie or dessert without frosting or chocoalte chips which will melt and make a mess.
If the food will be outside I usually make brownies and a bruchestta with olive oil garlic bread. They both keep well when it's warm. And both are affordable and easy to make in large quantities.

homemade ice cream!!
INGREDIENTS
- 3 juicy lemons, preferably unwaxed
- 175g icing sugar
- 420ml double cream
- 3 tablespoons iced water
METHOD
1) Grate the zest from two of the lemons using a microplane grater. Squeeze the juice of all three lemons and pour into a bowl with the zest and sugar, stir to combine and leave for 30 minutes, if you can, to let the flavour deepen.
2) Whip the cream with the water until it holds soft peaks, then whisk in the sweetened lemon juice. Turn into a shallow container, cover and freeze - no stirring, crystal-breaking-up mixing or anything needed - until firm. This could take anything from 3-6 hours depending on your freezer.
3) Let it stand in its container in the fridge for half an hour or so to get scoop-ready.
Serves 4

Little smokies wrapped in crescent roll dough. Cut each section of dough into three pieces ,and wrap around sausages. Bake at 375 for about11 minutes,or until golden brown. you can serve with mustard or a vegetable dip. They can be baked and frozen before time, just reheat or serve fresh.

I like the pasta salad with Italian dressing instead of mayonnaise. I use tons of fresh vegetables and black olives and artichoke hearts and mushrooms. It's delicious.

Pasta salad fuzion. Use pasta, slices of boneless Chinese roasted duck, toss with some hoisin sauce and sprinkle sesame seeds over.
