why is my finished bread rolls/loaves a bit sticky whn chewing em?Do sourdough breads hv soft fluffy texture?

it has been my experience that sourdough bread is a bit chewy in the middle and that the crust is a little tough. my mom makes it all the time and it's always been like this. as for other breads I'm no chef and can't tell you why.
