I've always heard that it refers to Tiamat in Babylonian and Sumerian mythology, who was associated with the sea and chaos. This is tied to "the deep" in Genesis 1:2. God formed order out of the chaos, and so this is how he defeated the Leviathan. Those who go with this theory usually point out the similarities between the Genesis story and the creation story in the Enuma Elish. There are other theories, of course, and you can find some places to start looking for more information on wikipedia.
The only other biblical creature I can think of like this is the Behemoth in Job 40:15-24.

there's a difference between Baylon and Babylonia. Baylonia grew to become right into a district which ran from the Tigris river west in direction of Egypt. I was going to say "hippopotamus", but I think hippopotamus is "behemoth".
There probably was a real reference to a real creature, but which one referred to is lost to time. Different "experts" have different opinions, but no one really knows for sure at this point what actual creature is referred to, be it real or symbolic.
All sorts of creatures are referred to in Daniel, the Book of the Revelation, etc.
If you're interested, use a Strong's Concordance Dictionary to do a word study.

I recall a study I did that satisfied my mind that Levithan was of the croc/aligator family, and Job 40:15; behemoth does sound like the hippoutumus, and the rino was the unicorn, and the bible is full of animals and birds. These people are smart in this book, they have every tool we have and how would I identy gold, silver, precious stones, brass, Iron, copper, and palnets ect.

I think it may be a dinosaur, it is saying that God can destroy a huge creature like that. Look up the word Leviathan in the Hebrew and see what it says

yeah...they were the dinosaurs... there have been unexplained passeges taken out of the bible during the early years of christianity that challengeed the birth of mankind. many scholars during the years of early christianity were baffled because knights returning from the crusades brought with them many discoveries in science and archeology like dinosaur bones which they first interpreted as dragons of the middle east.
