I love using rice in meatloaf. The recipe I adapted was actually a porcupine meatball recipe that used uncooked rice in it.
1 egg
1 cup water
1 envelope onion soup mix
1 1/2 pounds ground beef or veal/beef mix
1/2 cup long-grain rice, uncooked
1 large can (15 ounces) tomato sauce
1 can (14.5 ounces) diced tomatoes with juice
1 1/2 cups water
1 teaspoon sugar
PREPARATION:
Lightly beat the egg with water and half of soup mix. Mix lightly with ground beef and rice. Put aside. Combine tomato sauce, tomatoes with juice, water, sugar, and remaining soup mix. Heat to boiling. Pour half into the meat mix. Pat into a round cake pan (like an angelfood pan) or form into a circle in a deep baking dish. . Cover with the remaining tomato mix, then cover with aluminum foil. Bake at 350 degrees for 45 mins. Pour 1/2 cup of ketchup over top. Return to oven for another 15-20 mins. Then let sit and soak up any remaining liquid for 10 mins.

No. I put breadcrumbs in mine, but cracker crumbs and oatmeal would both be good. The reason I don't think rice would be good is that rice needs a lot of water to cook (you don't cook it dry), and it can't get very much from the meat in the meatloaf. It seems to me that the rice would be undercooked and the meat would be dry. Unless you cook the rice first, and then I think the meatloaf would just fall apart because the rice doesn't bind anything together once it's cooked.

I use 1/2 lbs burger,2 eggs,1/4 cup milk, salt &pepper plus below ingred. I put in a 9x13 cake pan feeds 4 with a few left overs! use italian bread crumbs in your meat mixture instead of plain or oatmeal. after 1st half hour of baking at 350 top with pizza sauce or I use Hunts 4 cheese spaghetti sauce then add chopped up pepperoni, mushrooms diced onion or anything else you would put on a pizza bake 25 min. then top with pizza cheese the last 10 min. Bake until melted. Oh, I also drain off most of the grease after the first 1/2 hour. You can also sprinkle with a little italian seasoning on top of the cheese. My kids won't eat meatloaf but will eat this!

Dad's Meatloaf with Tomato Relish

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
11/2 pounds ground beef
1 pound ground pork
3 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices
Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

No! I make a Brownsugar Meatloaf that has brown sugar & ketchup in bottom of pan and then I use saltine cracker crumbs, eggs, onion,milk etc... Yummy!

No-I use a can of Campbell cream of potato soup, bread crumbs and an egg. Mix well-place in lightly greased glass or metal loaf pans. Pour off grease during cooking .

No, I like my meat loaf with mashed potatoes or cream corn. Adding the rice is too much starch. If you are using it to bind it, use either bread crumbs or oatmeal (regular flavor) to help it.

Yes. I use saltine crackers crushed more often, but a new idea was to use Stove top stuffing. This is the type that comes in the large multi-serving package.
